Vegan Chocolate Peanut Butter Cups
How to make healthy vegan chocolate peanut butter cups.
Hello! I’m back today with one of my all-time FAVORITE desserts! I know I say that about a lot of my recipes, but peanut butter cups are seriously one of my favorite treats. I honestly haven’t had them in years either, since I went vegan a little over three years ago.

When I first went vegan, the hardest thing for me to give up was candy and candy bars. Take five’s and Reece’s were some of my favorite sweets, but unfortunately, they’re not vegan. In all honesty, it’s probably for the best that I don’t eat candy bars anymore. While they are absolutely delicious, they aren’t the best for your health.
I used to have these all the time for dessert. I’m the type of person who would rather have chocolate or brownies as opposed to ice cream or a milkshake. I think my brain is wired to love chocolate, but chocolate peanut butter cups really are hard to beat.
So, due to my love of chocolate peanut butter cups, I decided to make a healthy vegan alternative of one of my favorite desserts. All you really need is chocolate and peanut butter, but if you want them to taste sweeter, I’d recommend using either maple syrup or a sweetener of your choice. I didn’t use maple syrup–I just used traditional peanut butter as the filling. However, if you want it to taste more like a traditional peanut butter cup, I’d recommend adding a tablespoon of maple syrup. They’re incredible either way. It’s a great balance between sweet and salty.
The best part about this delicious treat is that they’re actually healthy. They are relatively low in sugar, and you can use a raw peanut butter like I did to make them even healthier. I know there’s a lot of peanut butters on the market that have added oils and sugars, so be on the look out to avoid those if you are looking for a healthier alternative. I typically buy peanut butters that have raw peanuts and salt. I don’t like buying peanut butter with added sugar because I feel it’s unnecessary and you can’t even taste the difference.

This is the perfect summertime treat to make with your friends and family. There is no baking time required, however, you do have to be a little patient to let these harden in the freezer. BUT, it’s well-worth it! They melt in your mouth and are super delicious. It’s making me hungry just looking at the pictures of them!
*On a side note, you can use any peanut butter you’d like for this recipe. If you want them a little sweeter, feel free to use a peanut butter that has added sugar in it. I prefer to use all-natural peanut butters in my dessert recipes, but by all means use your favorite peanut butter! These chocolate peanut butter cups are gooey, soft, and delicious!

Vegan Chocolate Peanut Butter Cups

- 5 tbsp vegan chocolate chips
- 3 tbsp peanut butter
- 1 tbsp maple syrup (optional)
Instructions
- Melt 3 tablespoons chocolate chips in microwave for 55 seconds or until softened
- Thoroughly coat 5 small tin liners in chocolate
- Place tin liners in freezer for 8-10 minutes until chocolate is hardened
- Mix in 3-4 tablespoons of peanut butter with one tablespoon of maple syrup (optional, you don't have to add maple syrup if you don't want to!)
- Add peanut butter filling to each tin
- Melt an additional 2 tablespoons chocolate chips in microwave for 45 seconds or until softened
- Add thin layer of chocolate over the peanut butter
- Let harden in freezer for 10 minutes
- Enjoy!

It’s essentially the same as this recipe, however, it has a peanut butter shell with a chocolate filling. Some people don’t like chocolate that much, so I wanted to make two recipes that give people an option. It’s a super simple treat that you can make in no time.
