Vegan Peanut Butter Banana Brownies

These vegan peanut butter banana brownies are gooey, moist, and incredibly delicious. This healthy brownie recipe calls for less than ten ingredients and is easy to make.

Vegan Peanut Butter Banana Brownies

To kick off the new year, I made these fudgy vegan brownies made with simple ingredients including oats, cocoa powder, baking powder, creamy salted peanut butter, banana, maple syrup, nut milk, and dark chocolate chips. All of these ingredients are affordable and can be easily found at any grocery store.

Brownies are one of my favorite desserts, and although I have a few brownie recipes on my blog already, I don’t have a brownie recipe for banana brownies. These brownies are rich and delectable, and this is the perfect easy treat to make whenever you’re craving something sweet.

This recipes yields about 16 medium-sized brownies, but feel free to double the recipe to make a larger batch. This recipe also only takes about 20 minutes to bake in the oven. The brownies are great paired with vanilla ice cream and whip cream.


Ingredients

  • Rolled or Quick Oats: For this recipe, you can use either rolled or quick oats to make the oat flour. Add your oats to a blender and blend it to make oat flour.
  • Cocoa Powder: Next, you need cocoa powder. Cocoa powder adds a strong chocolate flavor and it makes the brownies super fudgy and rich.
  • Baking Powder: You also need 1 tsp of baking powder. Baking powder acts as a leavening agent and helps the brownies rise.
  • Creamy Salted Peanut Butter: You also need 1/4 cup of creamy salted peanut butter. I like to use a nut butter in my dessert recipes because it adds a nice texture. I used a salted peanut butter, but you could also use an unsalted peanut butter if you prefer. I haven’t tried this recipe with almond butter, but I’m sure the brownies would still taste delicious if you used almond butter instead of peanut butter.
  • Banana: To sweeten and moisten the brownies, you need 2 mashed bananas. Banana is a great ingredient to use when baking desserts because it adds natural sweetness and creates the perfect texture for brownies, muffins, and breads.
  • Maple Syrup: For additional sweetness, you need maple syrup for this brownie recipe. I like to use maple syrup in my recipes because it’s a natural sweetener and is super sweet. It adds the perfect amount of sweetness to the brownies. This recipe calls for 1/4 cup + 4 tsp of maple syrup.
  • Nut Milk: You also need nut milk to create a runnier brownie batter. I used unsweetened vanilla almond milk, but any nut milk will work. Nut milk is creamy, which is why I often use a nut milk instead of water, but feel free to use water instead.
  • Dark Chocolate Chips: Lastly, you need 2-3 tbsp of vegan dark chocolate chips. I folded 2 tbsp of chocolate chips into the brownie batter and sprinkled additional chocolate chips on top.

Ingredients
  

  • 1 cup rolled or quick oats
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/4 cup creamy salted peanut butter
  • 2 mashed bananas
  • 1/4 cup + 4 tsp maple syrup
  • 1/2 cup + 3 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 3 tbsp vegan dark chocolate chips

Instructions
 

  • Preheat your oven to 350°
  • Blend your rolled or quick oats in a blender to form a flour-like consistency
  • Combine your oat flour, cocoa powder and baking powder in a large mixing bowl
  • Combine your creamy salted peanut butter, mashed bananas, maple syrup and nut milk in a separate mixing bowl and mix until all of the ingredients are thoroughly combined
  • Slowly fold your wet ingredients into your dry ingredients
  • Add your vegan dark chocolate chips
  • Lightly grease an oven safe baking dish
  • Pour in your brownie batter
  • Sprinkle additional dark chocolate chips on top
  • Bake in the oven for 20 minutes at 350°
  • Let cool and enjoy!
