Vegan Baked Pumpkin Bread

This vegan pumpkin bread is made with simple ingredients and is easy to make. This is the perfect treat to make with your friends and family during the fall time, and it’s one of my new favorite recipes to make.

For this recipe, you need oat flour, cinnamon, pumpkin pie spice, baking powder, canned pumpkin, unsweetened applesauce, maple syrup, unsweetened vanilla almond milk, and vegan dark chocolate chips. All of these ingredients are budget-friendly and can be find at almost any grocery store.

This recipe yields five servings, so feel free to double or even triple the recipe to make a larger batch. Let’s dive into the ingredients you need to make this delicious pumpkin bread recipe.


Ingredients

  • Oat Flour: The first ingredient you need to make this pumpkin bread is oat flour. To make oat flour, blend rolled or instant oats in a blender to form a flour-like consistency. You can also buy oat flour pre-made, but I always make it myself because it’s affordable and easy to make.
  • Cinnamon: Next, you need cinnamon. Cinnamon is one of my favorite spices to use for any fall-flavored recipe, and it’s the perfect spice to use in pumpkin bread. I used 1 tsp of cinnamon for this recipe and it added the perfect hint of cinnamon to this pumpkin bread.
  • Pumpkin Pie Spice: Like cinnamon, pumpkin pie spice is an essential spice to use when making pumpkin bread. It has a strong and distinct flavor and adds the perfect pumpkin flavor to pumpkin bread.
  • Baking Powder: Baking powder acts as a leavening agent and helps the pumpkin bread rise. Soft and fluffy pumpkin bread is the best kind of pumpkin bread, so you need 1 tsp of baking powder for this recipe.
  • Canned Pumpkin: Next, you need 1/2 cup canned pumpkin. Canned pumpkin helps moisten the pumpkin bread and adds a nice pumpkin flavor.
  • Unsweetened Applesauce: To add some sweetness, you need 3 tbsp of unsweetened applesauce. I love using applesauce as a sweetener in recipes because it’s a natural sweetener that’s incredibly sweet.
  • Maple Syrup: In addition to applesauce, you need 3 tbsp of maple syrup for this recipe. Maple syrup is super sweet, so 3 tbsp adds just enough sweetness for this pumpkin bread recipe. Feel free to add more for additional sweetness.
  • Unsweetened Vanilla Almond Milk: You also need a nut milk of your choice for this recipe. I used unsweetened vanilla almond milk, but any nut milk will work for this recipe. I used 1/4 cup + 2 tbsp of nut milk, and it added a nice creamy flavor to the pumpkin bread.
  • Vegan Dark Chocolate Chips: Lastly, you need vegan dark chocolate chips. Chocolate chips are optional, but I absolutely love adding chocolate chips to pumpkin bread. It adds sweetness and pumpkin and chocolate go great together!

Ingredients
  

  • 1 cup + 1/4 cup oat flour
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1 tsp baking powder
  • 1/2 cup canned pumpkin
  • 3 tbsp unsweetened applesauce
  • 3 tbsp maple syrup
  • 1/4 cup +2 tbsp unsweetened vanilla almond milk
  • 1-2 tbsp vegan dark chocolate chips

Instructions
 

  • Preheat the oven to 350°
  • Combine your dry ingredients to a large mixing bowl: oat flour, cinnamon, pumpkin pie spice and baking powder
  • Whisk together your wet ingredients in a separate mixing bowl: canned pumpkin, unsweetened applesauce, maple syrup and unsweetened vanilla almond milk
  • Slowly add your wet ingredients to your dry ingredients
  • Pour your pumpkin batter in a small loaf pan
  • Add your vegan dark chocolate chips on top
  • Bake in the oven at 350° for 32 minutes
  • Let cool and enjoy!
