Vegan Peanut Butter & Jelly Baked Oats

One of my favorite breakfasts to make is baked oats. I have oats almost every morning for breakfast–either in oatmeal, baked oats, or a baked good made with oats. It’s such an easy ingredient to use in recipes and it’s affordable too.

For today’s recipe, I’m sharing peanut butter and jelly baked oats. Peanut butter and jelly sandwiches will always be one of my favorite comfort foods. Peanut butter and jelly is truly an unbeatable combo, and it’s just as tasty made in the form of baked oats.

This recipe is gooey, warm, and you can use any berry that you want for the jelly. I chose frozen blueberries, but you could also use strawberries, blackberries, cherries, or another fruit of your choice.

This is a highly nutritious breakfast that I seriously can’t stop making. All you need is rolled or instant oats, baking powder, banana, a nut milk of your choice (I used unsweetened vanilla almond milk), creamy salted peanut butter, and frozen blueberries.

Let’s dive into the ingredients you need to make this easy and delicious single serving breakfast recipe.


Ingredients

  • Rolled or Instant Oats: For this recipe, you need 1/2 cup of rolled or instant oats. You’ll want to blend all of the ingredients together, so both rolled and instant oats will work for this recipe. I prefer to use oats as my flour base for baked oats recipes.
  • Baking Powder: Next, you need 1/4 tsp of baking powder. Baking powder acts as a leavening agent and helps the baked oats rise. Since this is a single-serving recipe, you only need a little bit of baking powder. A little goes a long way.
  • Banana: To sweeten the baked oats, you need 1/4 of a banana. I prefer to use banana in baked oats recipes because it not only adds sweetness, but it creates the perfect texture/consistency. Baked oats always turn out super fluffy and soft whenever I use banana. Bananas are also a budget-friendly ingredient.
  • Nut Milk: You also need 1/2 cup of nut milk. I used unsweetened vanilla almond milk, but you can use any nut milk you want. Using a nut milk over water adds creaminess, but you can also use water for this recipe.
  • Creamy Salted Peanut Butter: For the filling, you need 1 tbsp of creamy salted peanut butter. I filled half of my baking dish with the oat batter, added creamy peanut butter in the middle, and topped it off with more oat batter. This way, the peanut butter was melted in the middle when I took it out of the oven after it had finished baking.
  • Frozen Blueberries: Lastly, you need frozen blueberries. I added about 2 tbsp of frozen blueberries in the center along with the peanut butter. The blueberries melted in the oven and were super sweet. You can also top your baked oats with additional blueberries.

Feel free to add any additional toppings that you want. I topped my baked oats with blueberries, but you could also add cinnamon, a sweetener of choice, or more creamy peanut butter!


How Long Does This Recipe Take to Make?

This baked oats recipe can be made in less than 40 minutes. Allow around 10 minutes to prep the ingredients and 25 minutes to bake in the oven.

Ingredients
  

  • 1/2 cup rolled or instant oats
  • 1/4 tsp baking powder
  • 1/4 banana
  • 1/2 cup nut milk (I used unsweetened vanilla almond milk)
  • 1 tbsp creamy peanut butter
  • 2 tbsp frozen blueberries

Instructions
 

  • Preheat your oven to 350°
  • Blend your oats, baking powder, banana & nut milk in a blender or NutriBullet to form a thick and creamy consistency
  • Pour half of your oat batter in an oven-safe baking dish
  • Add your peanut butter and frozen blueberries
  • Pour the remaining oat batter in your baking dish
  • Top with frozen blueberries
  • Bake in the oven at 350° for 25 minutes
  • Let cool and enjoy!
