- 1 cup + 1/4 cup oat flour
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- 1 tsp baking powder
- 1/2 cup canned pumpkin
- 3 tbsp unsweetened applesauce
- 3 tbsp maple syrup
- 1/4 cup +2 tbsp unsweetened vanilla almond milk
- 1-2 tbsp vegan dark chocolate chips
Preheat the oven to 350°
Combine your dry ingredients to a large mixing bowl: oat flour, cinnamon, pumpkin pie spice and baking powder
Whisk together your wet ingredients in a separate mixing bowl: canned pumpkin, unsweetened applesauce, maple syrup and unsweetened vanilla almond milk
Slowly add your wet ingredients to your dry ingredients
Pour your pumpkin batter in a small loaf pan
Add your vegan dark chocolate chips on top
Bake in the oven at 350° for 32 minutes
