Vegan Chocolate Chip Banana Baked Oats

Welcome back to my blog! I hope everyone’s day is going well, and that this post brightens your day a bit. As you can probably tell, I’ve been a bit obsessed with making baked oats recipes lately. They’re some of my favorite recipes to make because of how easy they are and the assortment of flavors that you can make with them.

Today’s recipe is for chocolate chip banana baked oats. It calls for few ingredients that are all-budget friendly, including rolled oats, banana, a nut milk of your choice, mini semi sweet chocolate chips, and baking powder.


Ingredients

  • Rolled Oats: The first ingredient you need to make these chocolate chip banana baked oats is rolled oats. Rolled oats are super filling and it’s an ingredient I almost always use in my sweet breakfast recipes. Rolled oats are also really inexpensive, and I try to keep all of my ingredients affordable. I always use rolled oats to make oat flour because it’s so easy to make. You can make oat flour by blending your rolled oats in a blender or NutriBullet until you get a flour-like consistency.
  • Banana: The next ingredient you need is a ripe banana. I added 1/2 of a banana to my baked oats to make the oat batter creamy and sweet. I didn’t use any additional sweetener besides the banana and chocolate chips, because I felt that it was sweet enough on its own. I blended the banana with the rolled oats, baking powder, and nut milk in a NutriBullet until I got a thick and creamy consistency.
  • Nut Milk: You also need a nut milk of your choice. For this recipe, I used unsweetened vanilla almond milk, but you can use any plant-based milk. You could use oat milk, soy milk, or silk milk. Using milk instead of water helps make it creamier, which is why I opted for a plant-based milk as opposed to water. However, water will also work for this recipe.
  • Mini Semi Sweet Chocolate Chips: The next ingredient you need to make these baked oats is chocolate chips. I used mini semi sweet chocolate chips because semi sweet chocolate chips are incredibly sweet, but you can use any vegan chocolate chips that you want for this recipe. Some of my favorite chocolate chips are Lily’s vegan baking chips and Enjoy Life’s vegan chocolate chips. They’re not too expensive and they’re also super sweet.
  • Baking Powder: Lastly, you need 1/4 tsp of baking powder for this recipe. Baking powder helps the baked oats rise.

How Long Does This Recipe Take to Make?

This baked oats recipe is super easy to make. It takes about 10 minutes to prep the ingredients and to make the oat batter, 20 minutes to bake in the oven, and 5-10 minutes to cool. In total, this recipe takes bout 35-40 minutes, however, the prep is super short and you mostly have to be patient for your baked oats to bake in the oven.



How Many Servings Does This Recipe Make?

This is a single serving breakfast recipe. I used a 6 oz ramekin that was oven safe, and it made enough for one person. If you want to make two servings, double the recipe and use a larger oven safe baking dish.



Kitchen Supplies You Need

  • Oven Safe Baking Dish: I used a 6 oz ramekin for this recipe, but any oven safe baking dish will work for this recipe.
  • Blender or NutriBullet: I used my NutriBullet, but any high powered blender will work.
  • Measuring Cups: You need measuring cups to measure out the rolled oats, baking powder, mini chocolate chips, and nut milk.

Ingredients
  

  • 1/2 cup rolled oats
  • 1/2 ripe banana
  • 1/4 tsp baking powder
  • 1/2 cup nut milk (I used unsweetened vanilla almond milk)
  • 1 tsp mini semi sweet chocolate chips (vegan)

Instructions
 

  • Preheat the oven to 350°
  • Blend the rolled oats, ripe banana, baking powder and nut milk in a blender or NutriBullet to form a flour-like consistency
  • Pour the oat batter in an oven safe baking dish (I used a 6 oz ramekin)
  • Sprinkle the mini vegan semi sweet chocolate chips on top
  • Bake in the oven for 20 minutes at 350°
  • Let cool and enjoy!
