Chocolate Chip Cookie Dough Bars Made From Scratch

Over the weekend I made a recipe for vegan chocolate chip cookies dough bars, and they did not disappoint. They were sweet, chewy, and tasty! If you love chocolate and cookie dough, then you will absolutely love these chocolate cookie dough bars. They’re vegan, made with budget-friendly ingredients, and are super easy to make. For this recipe you need rolled oats, maple syrup, creamy peanut butter, chocolate chips, and almond milk.


Ingredients

  • Rolled Oats: The first ingredient you need to make these chocolate chip cookie dough bars is rolled oats. This recipe calls for 1 cup of rolled oats.
  • Maple Syrup: The next ingredient you need is maple syrup. I used maple syrup to sweeten these cookie dough bars, but you could use agave or another sweetener of choice if you prefer. This recipe calls for 1 tbsp + 1 tsp of maple syrup.
  • Creamy Peanut Butter: The next ingredient you need is creamy peanut butter. Peanut butter adds a strong peanut flavor to these cookie dough bars. This recipe calls for 1 tbsp of creamy peanut butter.
  • Chocolate Chips: The next ingredient you need is vegan chocolate chips. I used chocolate chips I bought from Trader Joe’s that are vegan, but you can use any chocolate chips that you want. Chocolate chips help make the cookie dough bars sweeter, and it adds the perfect hint of chocolate. Some of my favorite chocolate chips include Lily’s baking chips and Enjoy Life’s mini chocolate chips.
  • Almond Milk: The last ingredient you need to make these cookie dough bars is almond milk, or a nut milk of your choice. I used unsweetened vanilla almond milk for this recipe.

Ingredients
  

  • 1 cup rolled oats
  • 1 tbsp +1 tsp pure maple syrup
  • 1 tbsp creamy peanut butter
  • 1-2 tbsp chocolate chips (vegan)
  • 1/4 cup almond milk

Instructions
 

  • Preheat oven to 350°
  • Blend rolled oats in a blender or NutriBullet to form a flour-like consistency
  • Whisk together pure maple syrup, creamy peanut butter and almond milk
  • Add wet ingredients into dry ingredients
  • Fold in vegan chocolate chips
  • Lightly grease a baking pan with olive oil
  • Add cookie dough to baking pan
  • Bake at 350° for 10 minutes
  • Let cool and enjoy!
