Hello everyone and welcome back to my blog! In today’s post, I’m going to be sharing how to make this super yummy breakfast–double chocolate chip pancakes made from scratch. And the best part about this this pancake recipe is that it’s dairy-free and made with healthy ingredients.

Pancakes are one of my absolute favorite breakfasts to make. I have made so many different pancake recipes on my blog because it’s seriously one of my favorite recipes to make. Pancakes are sweet, fluffy, and super filling. It’s one of my go-to recipes if I’m craving something sweet.

Prior to adopting a vegan diet, I would use the pre-made pancake mix. However, not all pancake mixes are vegan, which is why I wanted to make my own pancake recipe from scratch. I also wanted to make a healthier version of pancakes that are low in added sugar.

This pancake recipe calls for 7 ingredients and can be made in less than 10 minutes. I used my favorite mini Dash pancake maker, which is a $10 pancake maker I bought from Amazon. It works wonders, and it’s truly one of my favorite kitchen gadgets. It only takes about 30 seconds-1 minute to cook each individual pancake, so it’s super convenient as well.

This recipe also makes 3 small-medium sized pancakes. Add your favorite toppings and enjoy! Some of my favorite toppings include peanut butter, chocolate chunks, and banana slices. Chocolate chip pancakes are some of my favorite pancakes to make, and they’re healthy as well.


Ingredients you’ll need for this recipe:

1. Rolled Oats

The first ingredient you’ll need to make these delicious double chocolate chunk pancakes are rolled oats. I love using rolled oats for my pancake recipes because it’s super inexpensive and really filling. A large container of rolled oats costs around $3 and lasts a very long time.

All you need to do to make oat flour is blend 1/3 cup of rolled oats in a blender or NutriBullet to form a flour-like consistency. This will serve as the base for the pancakes.


2. Cocoa Powder

The next ingredient you’ll need is cocoa powder. I used unsweetened cocoa powder for this recipe, but you can use a sweetened cocoa powder as well. Cocoa powder helps give the pancakes a strong chocolate flavor. It’s another one of my staples for baking.


3. Baking Powder

You’ll then need 1/2 tsp of baking powder. Baking powder helps make the pancakes fluffy and rise.


4. Banana

You’ll also need 1/3 of a banana. You’ll need to mash this banana with a fork until all of the banana chunks are gone.


5. Maple Syrup

Next, you’ll need 2 tsp of pure maple syrup. I don’t always use a sweetener for my pancake recipes, but I wanted these chocolate pancakes to be extra sweet, so I opted to use a natural sweetener. Maple syrup is super sweet on its own, so you don’t nee to use much.


6. Almond Milk

You’ll also need almond milk for this recipe. I used 2 tbsp of unsweetened vanilla almond milk, but you can use any plant-based milk you’d like. Some of my favorite plant-based milks include soy milk, silk milk, and oat milk. They’re all super tasty and perfect for using in breakfast/dessert recipes.


7. Chocolate Chips (vegan)

The last ingredient you’ll need to make these vegan pancakes are chocolate chips. You can get vegan chocolate chips pretty much anywhere, and they’re a great alternative to milk chocolate chips. Chocolate chips are optional, but they help make the pancakes sweeter and gives them a strong chocolate flavor.

Ingredients
  

  • 1/3 cup rolled oats
  • 1 tbsp cocoa powder
  • 1/2 tsp baking powder
  • 1/3 banana
  • 2 tsp pure maple syrup
  • 2 tbsp almond milk (I used unsweetened vanilla)
  • 2 tsp chocolate chunks (vegan)

Instructions
 

  • Blend the rolled oats in a blender or NutriBullet to form a flour-like consistency.
  • Combine all dry ingredients to a large mixing bowl: oat flour, cocoa powder and baking powder
  • Whisk together all wet ingredients in a separate mixing bowl: banana, pure maple syrup and almond milk
  • Slowly add your wet ingredients to your dry ingredients
  • Fold in the chocoalte chips/chunks
  • Bake your pancakes using a pancake maker or a skillet
  • Add your toppings and enjoy!

Final Thoughts
