Healthy Chocolate Strawberry Pancakes

Here’s how you can make healthy chocolate strawberry pancakes from scratch. These pancakes are vegan, easy to make, and this recipe calls for few ingredients.

Vegan Chocolate Strawberry Pancakes

Hello everyone and welcome back to my blog! In today’s post, I’m sharing how to make these delicious chocolate chip strawberry pancakes. This pancake recipe is vegan, healthy, and made with affordable ingredients. I’m all about affordability, so all of the ingredients used in this recipe are budget-friendly.

Strawberries are in season right now, so I figured it was the perfect time to make a fruity pancake recipe. I also added chocolate chips to this recipe because strawberries and chocolate is one of my favorite sweet combinations.



How Many Servings Does This Recipe Make?

This is a single serving recipe, but you can double or even triple the batch if you’re making pancakes for more than one person.


Ingredients

  • Rolled Oats: The first ingredient you need for this recipe is rolled oats. Rolled oats are one of my favorite ingredients to use in recipes, especially in my pancake recipes. I have an easy banana chocolate chip pancake recipe on my blog that I used as a reference for this recipe. For this recipe, blend 1/2 cup of rolled oats in a blender or NutriBullet to form a flour-like consistency. You can purchase pre-made oat flour, however, it’s super easy to make yourself. And, it’s really inexpensive to make.
  • Baking Powder: Next, you need 1/4 tsp of baking powder for this pancake recipe. Baking powder helps make the pancakes rise.
  • Cinnamon: You also need 1/4 tsp of cinnamon to make these pancakes. Cinnamon is one of my favorite spices to use in my breakfast and dessert recipes, and it adds a great flavor to any recipe. I used Ceylon cinnamon, and it added the perfect hint of cinnamon to these strawberry chocolate pancakes.
  • Banana: The next ingredient is 1/4 of a banana. Banana adds sweetness and makes the pancakes super moist. I use banana in almost all of my pancake recipes.
  • Nut Milk: You also need a nut milk of your choice. I used unsweetened vanilla almond milk to make these pancakes, but you can use any nut milk that you want! Some of my favorite plant-based milks include soy milk, silk milk, and oat milk. You could also use water, but I like to use a nut milk because it makes the pancakes creamier.
  • Strawberries: To make these pancakes strawberry flavored, you will need 3 tbsp of strawberries for the pancake batter, and an additional tbsp or two of strawberries for the topping. Strawberries are super sweet and add the perfect amount of sweetness to the pancakes.
  • Mini Semi Sweet Vegan Chocolate Chips: Lastly, you need mini semi sweet vegan chocolate chips. However, you can use any chocolate chips that you want. Some of my favorites include the vegan chocolate chips from Trader Joe’s, Enjoy Life’s mini baking chips, and Lily’s baking chips. Chocolate chips add some sweetness to the pancakes as well. I folded 1 tsp of mini semi sweet chocolate chips into the pancake batter and sprinkled an additional few on top. Add as many chocolate chips as you want.



Toppings

  • Creamy Peanut Butter: I drizzled creamy salted peanut butter on top of my pancakes. Peanut butter is a great source of protein and is one of my favorite foods to eat.
  • Strawberries: I added additional strawberries on top of my pancakes. This adds extra sweetness and gives the pancakes a stronger strawberry flavor.
  • Cinnamon: I also added a dash of cinnamon on top.
  • Mini Semi Sweet Chocolate Chips: Lastly, I sprinkled a few semi sweet chocolate chips on top.

Ingredients
  

  • 1/2 cup rolled oats
  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon
  • 1/3 cup nut milk (I used unsweetened vanilla almond milk)
  • 3 tbsp chopped strawberries
  • 1 tsp semi sweet chocolate chips (vegan)
  • 1/4 banana

Toppings

  • 1 tsp semi sweet chocolate chips (vegan)
  • 1 tbsp strawberries
  • 1/2 tbsp creamy peanut butter (optional)

Instructions
 

  • Add the rolled oats, baking powder, strawberries, cinnamon, banana, and nut milk to a blender or NutriBullet to for a thick and creamy consistency
  • Fold in the semi sweet vegan chocolate chips
  • Heat your pancakes on a skillet (I used my Dash mini pancake maker)
  • Cook each pancake for 2-3 minutes (recipes yields 6 small pancakes)
  • Add your toppings and enjoy!
