Vegan Superfood Granola
Hello everyone! I hope your day is going well so far. Today’s post is dedicated to this vegan superfood granola that I recently made.

Granola is a staple of mine–I absolutely love it. I typically buy it pre-made at my local grocery store, but I decided that I wanted to see if I could whip up a batch of homemade granola. It can be quite pricey depending on the brand you buy, and most have an insane amount of added sugar. While it’s super delicious, I sometimes don’t want a granola that’s super sweet.
I haven’t made granola in a while, so I decided that it was time to make some homemade granola that was healthy and nutritious. Granola is super versatile and can be made a plethora of ways. You can easily modify it to your liking, but I simply threw together some of my favorite ingredients to make a vegan superfood granola. I wanted to make a granola that had healthy fats, was low in sugar, and vegan. I’ve found that most granolas have honey in them, which makes them non-vegan. In place of honey, I used maple syrup, which is a pretty similar sweetener.
Maple syrup is a sweetener I use in most of my recipes as opposed to table sugar. If I’m going to use sugar in my recipes, I try to make them refined sugar-free and solely natural. If I’m not using maple syrup, I usually use fruit like banana or applesauce. I’ve learned in recent years that fruit sugar is the best sugar you can use. It’s super sweet and highly underrated. It’s one of my favorite ingredients to use to make my dessert recipes!
While it takes a little while to bake in the oven, the prep time is super short! There’s only 8 ingredients and they’re staples that you probably already have in your pantry. This granola recipe also makes a huge batch, so it should last you a long time. (well, unless you’re like me and can’t stop eating it because it’s sooo addicting)

Without further ado, let’s get baking!
Here’s the recipe.
Vegan Superfood Granola
Ingredients
- 2 cups rolled oats
- 2 tbsp chia seeds
- 2 tbsp pumpkin seeds
- 1/2 tsp cinnamon
- 1/4 cup pistachios
- 1/4 cup peanut butter
- 1/2 cup applesauce
- 2 tbsp maple syrup
Instructions
- Preheat oven to 350°
- Mix dry ingredients together: oats, chia seeds, pumpkin seeds, cinnamon, and pistachios
- Mix wet ingredients in a separate bowl: peanut butter, apple sauce, and maple syrup
- Slowly fold wet ingredients in dry ingredients
- Lay piece of parchment paper on baking sheet
- Pour mixture on parchment paper
- Bake in oven for 25 minutes at 350°
- Let cool in fridge for 15 minutes
- Enjoy!
Notes
It’s crunchy, tasty, and a perfect topping to add to smoothies, cereal, and ice cream. Or if you’re like me, you can simply eat it as a snack! I seriously couldn’t stop eating this stuff–it’s quite addicting so be careful! I’m pretty sure this batch of granola was gone within 10 minutes of making it. It was a major hit in my family to say the least! My sister especially liked this granola recipe, and she can be quite hard to please. It’s the perfect balance between salty and sweet. It’s a perfect snack for when you can’t decide if you’re in the mood for a more savory or sweet snack.
I like to call this a superfood granola because it has a variety of nuts that are nutrient-rich including pumpkin seeds, chia seeds, and pistachios. You can switch up which nuts and seeds you want to use, but I absolutely loved this combination. Pistachios are one of my favorite nuts, so I’m not surprised how good this batch of granola turned out.
Final Thoughts
This granola recipe was so easy to make, and it’s perfect to have as a snack or in cereal. Add some nut milk and you can have a super tasty granola cereal! It’s one of my favorite snacks to make, and it’s easy to meal prep to have for the rest of the week. You could also add it in dairy-free yogurt!
