Vegan Superfood Granola

Superfood granola that is a perfect topping for smoothie bowls, cereal, and as a snack throughout the day.

Ingredients
  

  • 2 cups rolled oats
  • 2 tbsp chia seeds
  • 2 tbsp pumpkin seeds
  • 1/2 tsp cinnamon
  • 1/4 cup pistachios
  • 1/4 cup peanut butter
  • 1/2 cup applesauce
  • 2 tbsp maple syrup

Instructions
 

  • Preheat oven to 350°
  • Mix dry ingredients together: oats, chia seeds, pumpkin seeds, cinnamon, and pistachios
  • Mix wet ingredients in a separate bowl: peanut butter, apple sauce, and maple syrup
  • Slowly fold wet ingredients in dry ingredients
  • Lay piece of parchment paper on baking sheet
  • Pour mixture on parchment paper
  • Bake in oven for 25 minutes at 350°
  • Let cool in fridge for 15 minutes
  • Enjoy!
