Vegan Superfood Granola

Superfood granola that is a perfect topping for smoothie bowls, cereal, and as a snack throughout the day.

- 2 cups rolled oats
- 2 tbsp chia seeds
- 2 tbsp pumpkin seeds
- 1/2 tsp cinnamon
- 1/4 cup pistachios
- 1/4 cup peanut butter
- 1/2 cup applesauce
- 2 tbsp maple syrup
Preheat oven to 350°
Mix dry ingredients together: oats, chia seeds, pumpkin seeds, cinnamon, and pistachios
Mix wet ingredients in a separate bowl: peanut butter, apple sauce, and maple syrup
Slowly fold wet ingredients in dry ingredients
Lay piece of parchment paper on baking sheet
Pour mixture on parchment paper
Bake in oven for 25 minutes at 350°
Let cool in fridge for 15 minutes
