Vegan Chocolate Chip Muffins

I’ve been wanting to make chocolate chips muffins for a while now, and I’m excited that I have perfected my recipe. This is a quick and easy recipe to make. It calls for 11 ingredients and takes only 15 minutes to bake in the oven. These muffins are dairy-free and oil-free.


Vegan Chocolate Chip Muffins

Ingredients
  

  • 8 dates (pitted)
  • 1 cup oat flour
  • 1 cup whole wheat flour
  • 1/2 tsp baking powder
  • 1/2 cup applesauce
  • 1/4 cup peanut butter
  • 1 cup almond milk
  • 3 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 cup cocoa powder
  • 1/4 cup vegan chocolate chips

Instructions
 

  • Preheat oven to 350°
  • Soak pitted dates in hot water for 10 minutes
  • Combine dry ingredients in one bowl: oat flour, whole wheat flour, baking powder, and cocoa powder
  • Blend wet ingredients in a food processor: dates, applesauce, almond milk, maple syrup, peanut butter, and vanilla extract
  • Combine wet ingredients to dry ingredients
  • Fold in vegan chocolate chips
  • Spray muffin pan with oil
  • Fill muffin pan with batter
  • Heat in oven for 15 minutes at 350°

These muffins are the perfect dessert to make for any occasion. I decorated them with colorful sprinkles to give them a pop of color and added a chocolate glaze on top. Adding toppings is the fun part, so add as many as you want.


These muffins were super chocolatey, fluffy, and they only take around 15 minutes to bake in the oven. Add colorful sprinkles on top, and it makes the perfect sweet treat! I added a homemade chocolate frosting on top and it was absolutely incredible! Feel free to add additional chocolate chips on top as well!
