Easy vegan chocolate chip muffins.

Ingredients
  

  • 8 dates (pitted)
  • 1 cup oat flour
  • 1 cup whole wheat flour
  • 1/2 tsp baking powder
  • 1/2 cup applesauce
  • 1/4 cup peanut butter
  • 1 cup almond milk
  • 3 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 cup cocoa powder
  • 1/4 cup vegan chocolate chips

Instructions
 

  • Preheat oven to 350°
  • Soak pitted dates in hot water for 10 minutes
  • Combine dry ingredients in one bowl: oat flour, whole wheat flour, baking powder, and cocoa powder
  • Blend wet ingredients in a food processor: dates, applesauce, almond milk, maple syrup, peanut butter, and vanilla extract
  • Combine wet ingredients to dry ingredients
  • Fold in vegan chocolate chips
  • Spray muffin pan with oil
  • Fill muffin pan with batter
  • Heat in oven for 15 minutes at 350°
