Vegan No Bake Almond Butter Chocolate Chip Energy Bites
These vegan no bake almond butter chocolate chip energy bites are incredibly delicious and super easy to make. This is the perfect high protein snack to make when you’re craving something sweet!

Vegan No Bake Almond Butter Chocolate Chip Energy Bites
Hello everyone and welcome back to my blog! I’m excited to share this recipe for vegan no bake almond butter chocolate chip energy bites. These energy bites are fudgy and sweet. Check out some of my other energy bites recipes on my blog as well!
I recently picked up this raw almond butter and had to make a recipe with it. I love almond butter because it has protein and is incredibly delicious, and these no bake energy bites are the perfect healthy treat to make.
For this recipe you need rolled or quick oats, coconut oil, pure maple syrup, almond butter (I used raw almond butter), mini semi sweet chocolate chips (you can use any vegan chocolate chips that you want), chia seeds, and a nut milk of your choice (I used unsweetened vanilla almond milk).
This recipe yields 12 energy bites, and it’s the perfect snack to bring with you when you’re on the go. I love meal prepping energy bites on the weekend to have throughout the week as a healthy snack for work.
Ingredients
- Rolled or Quick Oats: The first ingredient you need is rolled or quick oats. Add the oats to a blender or NutriBullet to form oat flour. I used 1 1/2 cup of quick oats for this recipe.
- Coconut Oil: Next, you need 1/2 tbsp of coconut oil. Coconut oil is an essential ingredient to use when making energy bites.
- Pure Maple Syrup: You also need 2 1/2 tbsp of pure maple syrup. Maple syrup adds the perfect amount of sweetness to these energy bites, and my personal favorite sweetener to use for dessert recipes is maple syrup.
- Almond Butter: Next, you need 1/4 cup of almond butter. I used a raw almond butter I bought from Trader Joe’s and it added the perfect nutty flavor. Almond butter has protein and is a great snack to have throughout the day.
- Mini Semi Sweet Chocolate Chips: For this recipe, I added 1 tbsp of vegan mini semi sweet chocolate chips and folded them in the energy bite mixture. Feel free to add an additional tbsp of mini chocolate chips for additional sweetness.
- Chia Seeds: You also need 2 tsp of chia seeds. I love chia seeds and add them into my recipes from time to time.
- Nut Milk: Lastly, you need 1/4 cup + 1/2 tbsp of a nut milk of your choice. I used unsweetened vanilla almond milk for this recipe, but you can use any plant-based milk that you want.
No Bake Almond Butter Chocolate Chip Energy Bites

- 1 1/2 cup rolled or quick oats
- 1/2 tbsp coconut oil
- 2 1/2 tbsp pure maple syrup
- 1/4 cup almond butter
- 1 tbsp mini semi sweet chocolate chips vegan
- 2 tsp chia seeds
- 1/4 cup + 1/2 tbsp nut milk (I used unsweetened vanilla almond milk)
Instructions
- Blend your rolled or quick oats in a blender or NutriBullet to form oat flour
- Mix together your oat flour, chia seeds, and semi sweet chocolate chips
- Whisk together your coconut oil, maple syrup, almond butter & nut milk in a separate bowl
- Slowly add your wet ingredients to your dry ingredients
- Form 12 energy bites
- Place your energy bites in the fridge for 30 minutes and enjoy!
Notes
These almond butter chocolate chip energy bites have only seven ingredients and taste absolutely incredible. These energy bites are one of my go-to healthy snacks to bring with me to work.
