Vegan Peanut Butter Chocolate Energy Bites

These vegan peanut butter chocolate energy bites are the perfect healthy snack! These energy bites are no-bake and incredibly easy to make.

Peanut Butter Chocolate Energy Bites

Hello everyone and welcome back to my blog! This recipe for peanut butter chocolate energy bites is the perfect healthy sweet treat! This is a great recipe to prep on the weekends so that you have a tasty treat to snack on throughout the week.

For this recipe, you need six ingredients: rolled or quick oats, pure maple syrup, creamy salted peanut butter, unsweetened cocoa powder, vegan semi sweet mini chocolate chips, and a nut milk of your choice (I used unsweetened vanilla almond milk).

This recipe yields eight small energy bites, so feel free to double or triple the recipe if you want to make a larger batch. I’ve been snacking on these energy bites all week long and they’re the perfect mid-day pick me up.



Ingredients

  • Rolled or Quick Oats: The first ingredient you need to make these fudgy peanut butter chocolate energy bites is rolled or quick oats. You can use either one, and you’ll want to blend it in a blender or NutriBullet to form oat flour. I blended quick oats in my NutriBullet until it formed a flour-like consistency. This recipe calls for 3/4 cup of oats.
  • Pure Maple Syrup: Next, you need 2 tbsp of pure maple syrup. One of my favorite sweeteners to use in my recipes is maple syrup because it’s a natural sweetener and it’s incredibly sweet. Adding two tbsp of maple syrup adds the perfect amount of sweetness to these vegan energy bites. You could use another sweetener, but note that it might taste slightly different.
  • Creamy Salted Peanut Butter: You also need 2 tbsp of creamy salted peanut butter. Creamy peanut butter is my absolute favorite type of peanut butter, but feel free to use crunch peanut butter instead.
  • Unsweetened Cocoa Powder: I also used 2 tbsp of unsweetened cocoa powder, but you can also use a sweetened cocoa powder for additional sweetness. Cocoa powder is what gives these energy bites a chocolate flavor, and I used Hershey’s Special Dark cocoa powder for this recipe. You can use any cocoa powder that you want.
  • Vegan Semi Sweet Mini Chocolate Chips: Next, you need 1 tbsp of vegan semi sweet mini chocolate chips. I like using semi sweet chocolate chips in recipes because they’re incredibly sweet. I folded 1 tbsp of chocolate chips into the batter so that they were evenly distributed. Feel free to add more chocolate chips or coat the energy balls in a layer of chocolate if you want the energy bites sweeter.
  • Nut Milk: The last ingredient you need is 1/4 cup of nut milk. I used unsweetened vanilla almond milk for this recipe, but you can use your favorite nut milk. Some of my favorite plant-based milks to use is oat milk, soy milk, and silk milk.

Instructions
 

  • Blend your rolled or quick oats in a blender or NutriBullet to form oat flour
  • Combine your oat flour, pure maple syrup, creamy salted peanut butter, cocoa powder, vegan semi sweet mini chocolate chips & nut milk to a bowl
  • Form eight small energy bites and place them on a plate
  • Place the energy bites in the freezer for 10 minutes
  • Enjoy!
