Vegan Peanut Butter Chocolate Baked Oats

This vegan peanut butter chocolate baked oats recipe is perfect for anyone who loves peanut butter and chocolate. It’s a single serving breakfast recipe that’s packed with protein (from the peanut butter), and it’s delicious topped with chocolate chips and pure maple syrup.

You can easily make this recipe in less than 30 minutes. Allow around 5 minutes for prep, 15 minutes to bake in the oven, and 5 minutes to cool. This is a quick recipe that you can make in the mornings.


Ingredients

  • Rolled or Instant Oats: The first ingredient you need is rolled or instant oats. You could also use oat flour, but I always use either rolled or instant oats and blend it in my NutriBullet to form oat flour. I used my NutriBullet, but a high powered blender will work as well. I love using oat flour in recipes because it’s an affordable ingredient and it bakes well in the oven. You need 1/2 cup of rolled or instant oats for this baked oats recipe.
  • Creamy Salted Peanut Butter: The next ingredient you need is creamy salted peanut butter. I prefer creamy over crunchy peanut butter, which is why the majority of my recipes call for creamy peanut butter. I used 2 tbsp of creamy salted peanut butter for this recipe, and it was the perfect amount to give it a strong peanut butter flavor. You can also drizzle additional peanut butter on top after it bakes in the oven.
  • Baking Powder: You also need 1/4 tsp of baking powder. I use baking powder in all of my baked oats recipes because it helps it rise. It’s an essential ingredient when baking.
  • Pure Maple Syrup: Next, you need 1-2 tsp of pure maple syrup for the peanut butter oat batter, as well as additional maple syrup for the topping. If you want your baked oats sweeter, then I recommend adding additional maple syrup in the oat batter prior to baking it in the oven. I used 1 tsp of pure maple syrup. Maple syrup is one of my favorite sweeteners to use when baking because it’s super sweet and adds the perfect amount of sweetness to any sweet recipe.
  • Mini Semi Sweet Vegan Chocolate Chips: I added 1/2 tbsp of mini semi sweet vegan chocolate chips on top. You can also fold some chocolate chips into the oat batter, so feel free to add more chocolate chips if you’d like. Similar to the maple syrup, you can add more chocolate chips if you want a sweeter breakfast. I prefer less sweet breakfasts, so I don’t often add a lot of sweetness to my breakfast recipes, however, you can add more chocolate chips to make it sweeter.
  • Nut Milk: The last ingredient you need is a nut milk of your choice. I used unsweetened vanilla almond milk, but you can also use soy milk, silk milk, oat milk, or another plant-based milk. I really like almond milk and oat milk, but there are so many plant-based milks to choose from. You could also use water in place of a nut milk, however, nut milk makes the baked oats creamier.



Some Things You Might Need For This Recipe

  • Ramekin 6 oz Oven Safe Baking Dish: For this baked oats recipe (as well as my other baked oats recipes on my blog), I used a 6 oz ramekin that was oven safe. I bought my ramekin from a local grocery store, but you can also purchase them on Amazon. I love using my ramekin for making single serving breakfast recipes and cakes.
  • Enjoy Life Chocolate Semi-Sweet Mini Chocolate Chips: For this recipe, I used semi sweet vegan mini chocolate chips. One of my favorite brands of vegan chocolate chips is Enjoy Life, but you can use your favorite chocolate chips. Chocolate chips add sweetness to any recipe, and I love adding them to my sweet breakfast recipes.
  • Smucker’s Creamy Natural Peanut Butter: For this recipe, I used Trader Joe’s Creamy Salted Peanut Butter, but another one of my favorite creamy peanut butters to use is the Smucker’s Creamy Natural Peanut Butter. It’s really delicious and works well in recipes!

Ingredients
  

  • 1/2 cup rolled or instant oats
  • 2 tbsp creamy salted peanut butter
  • 1/4 tsp baking powder
  • 1-2 tsp pure maple syrup (plus more for the topping)
  • 1/2 tbsp mini semi sweet vegan chocolate chips
  • 1/3 cup + 2 tbsp nut milk (I used unsweetened vanilla almond milk)

Instructions
 

  • Preheat the oven to 350°
  • Add the rolled or instant oats, creamy salted peanut butter, baking powder, pure maple syrup & nut milk to a blender or NutriBullet and blend until there is a thick and creamy consistency
  • Pour the oat batter in an oven safe baking dish (I used a 6 oz ramekin)
  • Sprinkle the mini vegan semi sweet chocolate chips on top
  • Bake in the oven for 15 minutes at 350°
  • Let cool
  • Drizzle additional maple syrup on top and enjoy!
