Vegan Apple Pie Microwave Oatmeal

Delicious vegan apple pie oatmeal you can make in the microwave. This oatmeal recipe is sweet, filling, and super easy to make.

Vegan Apple Pie Microwave Oatmeal

Although I love making baked oats in the mornings for breakfast, I don’t always have a lot of time to make breakfast before heading to work. That’s why I love making oatmeal in the microwave because it only takes a few minutes to cook.

Today’s breakfast recipe is vegan apple pie microwave oatmeal. This is a super sweet breakfast that’s packed with cinnamon, apples, pure maple syrup, and more. This is the perfect easy breakfast to make if you’re craving something sweet in the morning.

To make this recipe, you need rolled or quick oats, nut milk, unsweetened applesauce, cinnamon, chopped apples, and pure maple syrup. You can add additional toppings, but I thought it was delicious with just the maple syrup drizzled on top. It was a really filling breakfast and took me less than five minutes to make. This is the perfect breakfast recipe to make in the mornings when you want something quick.


Ingredients

  • Rolled or Quick Oats: For this recipe, you can either use rolled or quick oats. I typically buy quick oats because I like them better than rolled oats, but you can use either one for this recipe. Oats are one of my favorite ingredients to use because they’re filling and nutritious. There are so many different oatmeal recipes that you can make, and this apple pie oatmeal recipe is incredibly delicious.
  • Nut Milk: Next, you need a nut milk of your choice. I used unsweetened vanilla almond milk for this recipe, but you can use any nut milk that you want. I also really like oat milk, but I recommend using a nut milk because it makes the oats creamier. You can use water if you prefer.
  • Unsweetened Applesauce: You also need 3 tbsp of unsweetened applesauce. I used applesauce to give the oats a stronger apple flavor and to make them sweeter. You can use sweetened applesauce as well, but since apples are already so sweet on their own, I always use unsweetened applesauce in my recipes.
  • Cinnamon: You also need 1/4 tsp of cinnamon. Cinnamon is an essential ingredient when making any recipe with apples in it. I love cinnamon and it’s a great spice to add to your oatmeal.
  • Chopped Apples: Next, you need 1/4 cup of chopped apples. I cut up an apple into tiny pieces and mixed the apple chunks in the oatmeal prior to heating it in the microwave. You can also add additional apple pieces on top.
  • Pure Maple Syrup: Lastly, you need 2 tsp of pure maple syrup (or more, depending on how sweet you want your breakfast). I drizzled maple syrup on top of my oatmeal after heating it in the microwave, and it added the perfect amount of sweetness to this recipe.

One of my favorite brands of vegan chocolate chips is Enjoy Life, but you can use your favorite chocolate chips. Chocolate chips add sweetness to any recipe, and I love adding them to my sweet breakfast recipes. 
  • Smucker’s Creamy Natural Peanut ButterOne of my favorite creamy peanut butters to use is Smucker’s Creamy Natural Peanut Butter. It’s really delicious and works well in recipes!

Ingredients
  

  • 1/2 cup rolled or quick oats
  • 1/3 cup + 1 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 3 tbsp unsweetened applesauce
  • 1/4 tsp cinnamon
  • 1/4 cup chopped apples
  • 2 tsp pure maple syrup (for the topping)

Instructions
 

  • Add your rolled or quick oats, nut milk, unsweetened applesauce, cinnamon & chopped apples to a microwave safe bowl and mix until the ingredients are thoroughly combined
  • Microwave your oatmeal for two minutes
  • Transfer your oatmeal into another bowl
  • Drizzle 1-2 tsp of pure maple syrup on top
  • Enjoy!

This apple pie oatmeal recipe is incredibly easy to make and it’s great if you need a quick breakfast to make in the mornings. I topped my oatmeal with apple slices and drizzled maple syrup on it, and it turned out so well. This breakfast also only took me about five minutes to make.
