Vegan Chocolate Protein Pancakes

Hello everyone and welcome back to my blog! I’ve been baking a lot of quick and easy breakfasts lately, and I’m super excited to share this recipe for vegan chocolate protein pancakes with you all.

I use to make pancakes all the time as a kid. My parents would buy the boxed pancake mix where all you had to do was add water or milk. It was super simple and took no time at all to make. The pancakes were always super fluffy and I usually topped mine with a big heaping of maple syrup, powdered sugar, and occasionally some fruit if I wanted to be a bit more healthy.

Something I’ve realized in these past few years is that although it’s sometimes quicker and easier to simply buy pre-made pancake mixes and cake mixes, they tend to not be the healthiest. They are usually made with additional ingredients to extend the shelf life, and I can hardly recognize half the ingredients listed on the box.

That’s why I love making my own pancakes from scratch. You know exactly what ingredients you’re putting into the pancakes, and you can make them as healthy as you want.

So today’s recipe is dedicated to these chocolate protein pancakes I made the other day for breakfast. They were super tasty and not overly sweet, which I much prefer if I’m eating pancakes for breakfast. This recipe is also low in sugar and sweetened with fruit. There are also no oils in this recipe, and you only need 5 ingredients to make these pancakes. They’re likely ingredients you already have lying around in your kitchen.


Here are the ingredients you’ll need to make these chocolate protein pancakes:

1. Oat Flour

The first ingredient you’ll need to make these vegan chocolate protein pancakes is oat flour. I really like using oat flour to make pancakes because I’ve found that oat flour is a bit sweeter and less dense than whole wheat pastry flour. If you’re unfamiliar with how to make oat flour, all you need to do is blend rolled oats in a blender or NutriBullet to form a flour-like consistency.


Rolled oats are also super inexpensive to buy. You can get a large tub of rolled oats that will last you weeks or even months for only a few dollars. I also really like oats because they’re rich in carbs and give you energy.


2. Vegan Chocolate Protein Powder

Next you’ll need a vegan chocolate protein powder of your choice. If you’ve looked at some of my other recipes on this blog, then you’ll know that my go-to vegan protein powder is by the brand Orgain. I really like this brand because it’s a vegan protein powder made with all-natural and clean ingredients. It also doesn’t taste chalky or have a weird after-taste, which is something I’ve experienced with some of the other other protein powders I’ve tried.

Orgain also has a vanilla protein powder as well as a peanut butter chocolate one. I really like both, but I’m a sucker for chocolate so I prefer the chocolate peanut butter or creamy chocolate fudge flavor. However, you can use any protein powder of your choice.


3. Baking Powder

You’ll also need 1/4 tsp of baking power to make the pancakes a bit fluffier and so they will rise.


4. Banana

You’ll then need 1/3 of a small banana. Since I didn’t use any sweetener in this recipe aside from the protein powder, I wanted to use a small amount of banana to give the pancakes some extra sweetness. If you’re wanting your pancakes sweeter, go ahead and add 1 tsp of sweetener.


5. Almond Milk

The last ingredient you’ll need to make these delicious vegan chocolate protein pancakes is almond milk, or a plant-based milk alternative. My go-to plant milk is almond milk, but you can also use soy milk, oat milk, or chocolate almond milk. I used almond milk instead of water to make the pancakes creamier and for additional nutrients.


The toppings

I added some sliced banana and creamy natural peanut butter on top of my pancakes. I like to add peanut butter for some protein and healthy fats, but you can add any toppings you want. And, if you want your pancakes to have a strong chocolate flavor, you can add some vegan chocolate chips as well.

Ingredients
  

  • 1/4 cup + 2 tbsp oat flour
  • 2 tbsp vegan chocolate protein powder
  • 1/4 tsp baking powder
  • 1/3 banana
  • 1/4 cup + 1 tbsp almond milk (nut milk)
  • 1 tsp vegan chocolate chips optional

Instructions
 

  • Add all ingredients to a food processor or blender: oat flour, protein powder, baking powder, banana and almond milk
  • Blend until there is a thick and creamy consistency
  • Lighty grease a pan with olive oil
  • Form six small pancakes on pan
  • Add toppings and enjoy!

Final Thoughts

This is the perfect healthy breakfast to make that’s both sweet and high in protein. I like to eat some sort of protein for breakfast so I have energy to start my day.
