Vegan Cake Batter Protein Pancakes

This recipe is for cake batter protein pancakes. These pancakes are sweet, fluffy, and incredibly delicious. Add all your favorite toppings like creamy peanut butter, rainbow sprinkles, and vegan whip cream.

Vegan Cake Batter Protein Pancakes

This recipe for vegan cake batter protein pancakes has to be my new favorite. I absolutely love anything cake batter or birthday cake flavored, and this pancake recipe is no exception. This is the perfect easy breakfast to make when you’re craving something sweet.

If you missed my last post, I made vegan chocolate protein pancakes, which were super tasty and a perfect breakfast for anyone who loves chocolate. I’ve been on the pancake train lately and whipped up these vegan cake batter pancakes that are also low in sugar and high in protein.

I like adding protein to my breakfasts to give me some energy to start my day. I find that I feel better when I eat a breakfast that is filling and rich in carbs and protein. And I definitely prefer sweet breakfasts over savory breakfasts, so what better way to kick of the day than with a hot stack of yummy cake batter pancakes?

These pancakes are also really healthy. They’re made with six simple ingredients including oat flour, nut milk (I used unsweetened vanilla almond milk), baking powder, banana, rainbow sprinkles, and vanilla protein powder (I used Orgain Simple plant-powered vanilla protein powder). You can add maple syrup on top or agave, but I topped my pancakes with creamy peanut butter and a vegan coconut whip cream that I bought from Trader Joe’s.


Ingredients

  • Rolled or Quick Oats: The first ingredient you need to make these delicious cake batter pancakes is oat flour. To make oat flour, all you have to do is blend rolled oats in a blender or NutriBullet to form a flour-like consistency. I’ve never actually bought oat flour–I always make it. I like to use oat flour in my recipes because it’s an inexpensive ingredient and is also super tasty. It serves as the perfect base for making pancakes.
  • Nut Milk: The next ingredient you need is your favorite nut milk. My go-to is unsweetened vanilla almond milk, but I also really like soy milk and oat milk. Oat milk is a bit sweeter then almond milk and soy milk, but any nut milk will do just fine.
  • Baking Powder: You then need 1/4 tsp of baking powder to help make the pancakes fluffy. Fluffy pancakes are the absolute best.
  • Banana: You also need 1/3 of a banana. Since I didn’t use any sweetener like sugar or maple syrup in this recipe, I wanted to use banana to sweeten them a bit. Fruit like banana, applesauce, and dates are great ingredients to use if you want to naturally sweeten dessert recipes without adding more added sugar to your recipes. Especially since this is a breakfast, I didn’t want to make the pancakes overly sweet. However, if you’re looking to make more of a dessert for breakfast, you can certainly add 1 tsp of a sweetener of your choice.
  • Rainbow Sprinkles: The next ingredient you need is rainbow sprinkles. You can use any colorful sprinkles you have. I got mine from a local grocery store, but they sell them pretty much everywhere. I added 1/2 tsp of rainbow sprinkles to my pancakes, but you can also add some additional sprinkles on top if you want as well. Adding sprinkles is the fun part, so go crazy with it.
  • Simple Vanilla Plant Protein Powder: The last ingredient you need to make these vegan cake batter pancakes is vanilla protein powder. I used a vanilla protein powder by the brand Orgain, but you can use any protein powder you want. Orgain is my favorite vegan brand to buy for protein powder because it’s made with clean ingredients and is super tasty. They don’t have a chalky flavor or weird aftertaste which I like.

Ingredients
  

  • 1/2 cup rolled or quick oats
  • 3 tbsp Simple vanilla protein powder
  • 1/4 tsp baking powder
  • 1/2 cup nut milk (I used unsweetened vanilla almond milk)
  • 1/3 banana
  • 1 tsp rainbow sprinkles

Instructions
 

  • Add the rolled or quick oats, Simple vanilla protein powder, baking powder, nut milk & banana to a blender or NutriBullet to form a thick and creamy consistency
  • Mix in the rainbow sprinkles
  • Lightly grease your pancake griddle (I used my Dash mini griddle)
  • Cook each pancake for 1-2 minutes (recipe yields 6 small pancakes)
  • Add toppings and enjoy!
