Vegan Creamy Pumpkin Pie Oatmeal

Today’s post is a recipe tutorial on how to make thick and creamy pumpkin pie oatmeal. It’s a super quick and easy recipe to make and calls for 6 simple ingredients.

Pumpkin Pie Oatmeal

While it’s no longer the fall season, I thought I’d bring back a pumpkin themed recipe. Fall is one of favorite seasons, and it’s mostly because of all the yummy fall drinks and treats. This pumpkin pie oatmeal is creamy, delicious, and has a strong pumpkin flavor. It’s great topped with almond butter or peanut butter, pumpkin seeds, maple syrup, and chocolate chips. This recipe also takes less than five minutes to make.

Oatmeal has been my go-to breakfast as of lately, and although I love traditional oatmeal with peanut butter, blueberries, and cinnamon, I thought I’d switch things up and try out a fun pumpkin pie oatmeal recipe. This turned out super delicious and is a really filling breakfast which is great if you want a nutritious breakfast in the morning. The ingredients you need for this recipe include instant or rolled oats, canned pumpkin, pumpkin pie spice, a nut milk of your choice, pure maple syrup, and mini semi sweet vegan chocolate chips.


Ingredients

  • Rolled or Quick Oats: You first need rolled or quick oats for this recipe. I often buy quick oats because I prefer them over rolled oats, however, you can use rolled oats as well. Quick oats don’t take a long time to cook in the microwave, which is another reason I really like buying them. I also like using oats in my recipes because it’s an inexpensive ingredient and super nutritious. Oats always keep me full for long periods of time, and I have them almost everyday for breakfast. It’s a budget friendly ingredient that is perfect for baking and making delicious recipes with.
  • Canned Pumpkin: The next ingredient you need is canned pumpkin. Canned pumpkin not only gives the oatmeal a strong pumpkin flavor, but it helps make it thick and creamy. You can get canned pumpkin at the store for super cheap as well. I love canned pumpkin, but since it’s not very sweet, I used maple syrup and mini chocolate chips to sweeten this recipe.
  • Pumpkin Pie Spice: One of the most important ingredients is the pumpkin pie spice. You’ll need 1/4 tsp of pumpkin pie spice for this recipe. It’s a super flavorful spice and gives the pumpkin pie oatmeal a strong pumpkin flavor.
  • Nut Milk: You then need almond milk, or a plant-based milk alternative. My go-to plant-based milk is unsweetened vanilla almond milk, which has no added sugar. I typically use almond milk or soy milk, but you can also use oat milk or another plant-based milk if you prefer. You could also use water in place of milk, but using almond milk makes the oatmeal extra creamy. Or if you want the oats a bit sweeter, you can use a sweetened plant-based milk.
  • Pure Maple Syrup: For this recipe, you need 2 tsp of pure maple syrup (plus more for the topping). I like adding maple syrup to my pumpkin oats because canned pumpkin isn’t very sweet. You can add additional maple syrup on top as well.
  • Mini Semi Sweet Vegan Chocolate Chips: Lastly, you need 2 tsp of mini semi sweet vegan chocolate chips. Semi sweet chocolate chips are super sweet and add the perfect amount of sweetness to this oatmeal recipe. Feel free to add more chocolate chips if you want your oats even sweeter!

Ingredients
  

  • 1/2 cup rolled or instant oats
  • 1/4 cup canned pumpkin
  • 1/4 tsp pumpkin pie spice
  • 1/2 cup nut milk (I used unsweetened vanilla almond milk)
  • 2 tsp pure maple syrup
  • 2 tsp vegan mini semi sweet chocolate chips

Instructions
 

  • Add your rolled or quick oats and pumpkin pie spice to a microwave save bowl
  • Add your canned pumpkin, nut milk & pure maple syrup to a separate bowl
  • Slowly add your wet into your dry ingredients and mix thoroughly
  • Heat in the microwave for 2 minutes (stir after a minute)
  • Add pure maple syrup and mini chocolate chips on top and enjoy!
