Vegan Cake Batter Oatmeal

Hello everyone and happy Thursday! I hope you are all having a wonderful day. I’m super excited to share this delicious vegan cake batter oatmeal recipe I made recently. It’s been one of my go-to breakfasts and is the perfect recipe to make if you’re in the mood for something sweet!

Vegan Cake Batter Protein Oatmeal

If you saw my most recent post, I made three different low-sugar vegan ice-cream flavors: cake batter, peanut butter chocolate, and pumpkin. All of them turned out super delicious and I was inspired to make this cake batter oatmeal from the cake batter ice-cream I made.

You can make this oatmeal with 4 simple ingredients, and it’s also high in protein. All you need is rolled oats or quick oats (I used quick oats that only take 60-90 seconds to cook in the microwave), vanilla protein powder of your choice, rainbow sprinkles, and a nut milk of your choice. I used a vanilla protein powder from my favorite brand, Orgain, and it was incredibly delicious. It’s a vegan protein powder that’s plant-based and low in sugar. It’s super tasty too!


Ingredients

  • Rolled or Quick Oats: The first ingredient you need are oats. I used quick oats because they only take 60-90 seconds to cook in the microwave, but regular rolled oats will work for this recipe as well. I love having oats in the morning for breakfast because it’s a super filling meal and gives me energy for the day. Oats are also inexpensive, which is perfect for college students or anyone whose looking for some budget-friendly recipes. I love making recipes with few ingredients because they’re always affordable to make. As a recent college graduate myself, I’m not trying to spend an excess amount of money on groceries or making recipes, so I always opt to buy ingredients that are accessible and cheap.
  • Vanilla Protein Powder: Next you need vanilla protein powder to give this oatmeal a strong vanilla flavor. I used Simple Orgain Plant-Based Vanilla Protein Powder, which is my favorite brand of vegan protein powder. They also have a chocolate fudge flavor and a peanut butter chocolate flavor, which I also really like. I like to use their protein powders because they don’t have a chalky flavor or weird after-taste, which makes it a great ingredient to use for recipes. This Simple Orgain Protein Powder is vegan-friendly and made with simple ingredients. I’ve tried other vegan protein powders in the past, but this brand is by far my favorite. It’s a great protein powder if you’re in need of a healthy protein powder that’s vegan. With that being said, you can use any vanilla protein powder that you want for this recipe. Just note that it might taste slightly different if you use another brand of vanilla protein powder.
  • Rainbow Sprinkles: The next ingredient you need to make this vegan, low-sugar cake batter protein oatmeal is rainbow sprinkles of your choice. I sprinkled about one teaspoon of rainbow sprinkles into my oatmeal and cooked in the microwave so they would melt. Since I didn’t use any other sweetener in this recipe, the sprinkles help give the oatmeal more sweetness.
  • Nut Milk: The last ingredient you need is a nut milk of your choice. I used unsweetened vanilla almond milk, but you can use any plant-based milk. I also really like oat milk. Using a nut milk makes the oats creamier, but you can use water as well.

Optional Toppings

  • Creamy Peanut Butter: I added Pbfit on top of my oatmeal for some additional flavor and protein. I love adding either creamy peanut butter or Pbfit to my oatmeal because it’s incredibly delicious and adds great flavor.
  • Vegan Whip Topping: I also added some vegan coconut whip topping. Whip cream is one of my favorite toppings for oatmeal and ice cream, and it adds sweetness to this breakfast recipe.

Ingredients
  

  • 1/3 cup rolled or quick oats
  • 1 scoop Simple Plant Based Vanilla Protein Powder (18.5g)
  • 1 tsp rainbow sprinkles
  • 1/3 cup + 3 tbsp nut milk (I used unsweetened vanilla almond milk)

Optional Toppings

  • creamy peanut butter or Pbfit
  • Vegan Whip Topping

Instructions
 

  • Add all the ingredients to a microwave safe bowl: quick oats, vanilla protein powder, rainbow sprinkles & nut milk
  • Cook in the microwave for 90 seconds
  • Add toppings and enjoy!
