Fudgy Vegan Peppermint Swirl Brownies

It’s the holiday season, which means it’s time to bring out all of the yummy holiday treats. Peppermint is one of my favorite holiday flavors, and these fudgy vegan peppermint swirl brownies are delicious.

One of my favorite treats to make during the holidays is peppermint brownies. I love anything peppermint, especially fudgy, gooey brownies.

These are double chocolate chip brownies that taste incredible. This is the perfect treat to make if you’re going to a holiday party or hosting one. It’s a really simple recipe and takes less than an hour to make including prep time.


Ingredients

  • Whole Wheat Flour: The first ingredient you need is whole wheat flour. This recipe calls for 1/2 cup of whole wheat flour.
  • Oat Flour: The next ingredient you need is oat flour. Blend rolled oats in a blender to make oat flour. This recipe calls for 1/4 cup of oat flour.
  • Vanilla Extract: You also need a splash of vanilla extract.
  • Peanut Butter: The next ingredient you need is peanut butter. I used creamy peanut butter for this recipe, but feel free to use crunchy peanut butter instead. This recipe calls for 1/4 cup of peanut butter.
  • Cocoa Powder: You also need unsweetened cocoa powder. I used Hershey’s Unsweetened Cocoa Powder.
  • Applesauce: You also need 1/2 cup of applesauce. Applesauce adds sweetness and makes the brownies gooey.
  • Truvia Baking Blend: You also need truvia baking blend, or a sweetener of your choice.
  • Mini Candy Canes: The next ingredient you need is mini candy canes. Candy canes add a strong peppermint flavor and a nice crunch. This recipe calls for 2 mini candy canes.
  • Almond Milk: Next, you need almond milk, or a nut milk of your choice. I used unsweetened vanilla almond milk for this recipe.
  • Chocolate Chips: The last ingredient you need is vegan chocolate chips. This recipe calls for 1 tbsp of chocolate chips, but you can certainly add more if you want the brownies even sweeter. I sprinkled the chocolate chips on top, but you can fold some chocolate chips in the batter as well.

Ingredients
  

  • 1/2 cup whole wheat flour
  • 1/4 cup oat flour
  • 1 tsp vanilla extract
  • 1/4 cup creamy peanut butter
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup unsweetened applesauce
  • 2 tbsp truvia
  • 2 mini candy canes
  • 1/3 cup plant-based milk
  • 1 tbsp chocolate chips (vegan)

Instructions
 

  • Preheat oven to 350°
  • Combine dry ingredients to one bowl: whole wheat flour, oat flour, unsweetened cocoa powder, and truvia
  • Combine wet ingredients to a separate bowl: vanilla extract, creamy peanut butter, applesauce, and nut milk
  • Slowly fold the dry ingredients into the wet ingredients
  • Spray a brownie pan with olive oil spray
  • Add brownie batter to pan
  • Sprinkle vegan chocoalte chips and crushed candy cane on top
  • Bake at 350° for 13 minutes
  • Let cool and enjoy!
