Crispy Roasted Chickpeas Recipe

Happy Monday! I’m super excited to share with you all this vegan crispy roasted chickpeas recipe that I made a few days ago.

I’ve been making a lot of dessert recipes lately on my blog because of the holidays and all the fun treats that come with it, but I wanted to switch things up and share with you all this delicious high-protein snack that you can add to your meals.

One of my favorite meals to make is avocado toast with tofu because it’s high in protein and great for vegans to get additional protein and iron in their diet. But, sometimes I’m not in the mood for tofu. That’s why this crispy roasted chickpea recipe is perfect for people who don’t particularly like tofu, but want a snack that’s highly nutritious.



It’s a great snack to have alone as it is, but you can also incorporate it into a variety of meals for some extra protein! Some of the dishes include salads, crispy roasted chickpea toast, and stuffed sweet potatoes. These are just a few of my favorite dishes to make with these delicious roasted chickpeas.


Meals you can make with crispy roasted chickpeas:

1. Stuffed Sweet Potatoes

If I’m making stuffed sweet potatoes for lunch or dinner, adding these crispy roasted chickpeas is the perfect finishing touch. I often add nutritional yeast, avocado, hummus, and these crispy roasted chickpeas and it is seriously soo good. It’s definitely one of my new favorite meals to make.

This is a great meal that’s highly nutritious. Nutritional yeast contains vitamin B12, which is a vitamin primarily found in animal products. Chickpeas are high in protein and iron, and are a great replacement for meat and dairy if you’re vegan or vegetarian.


2. Avocado Chickpea Toast

Another one of my favorite meals to make is avocado toast with these crispy roasted chickpeas. It’s seriously so good and a great meal to make to get some extra protein and iron in your diet.

I like to add avocado, nutritional yeast, Trader Joe’s Everything but the Bagel Seasoning, (which is absolutely amazing–I highly recommend trying it if you haven’t already) and these crispy roasted chickpeas.


3. Salads

Another meal you can make with this recipe are salads! I don’t eat salads often, but when I do, I fill them with all of my favorite toppings! Salads are super tasty to make and are versatile.

Crispy roasted chickpeas are a great replacement for meat and dairy products, so if you’re vegan or vegetarian, you can add in these crispy roasted chickpeas in place of meat & dairy and still have a high protein meal!


Ingredients you’ll need:

1. Canned Chickpeas

You’ll first need one can of chickpeas. These are super inexpensive to buy and are great for people who are looking to make affordable vegan recipes. After you drain the canned chickpeas, be sure to dry them off so they can get nice and crispy in the oven.


2. Olive Oil

You’ll also need olive oil. I don’t like to use a lot of olive oil in recipes, so I used just a teaspoon for this entire batch of chickpeas. I drizzled olive oil on them to make sure they were evenly coated.


3. Garlic Powder

This recipe is full of spices. The first spice you’ll need is garlic powder, which is one of my favorite spices to use in recipes. Garlic powder is a bit salty and gives these roasted chickpeas the perfect flavor.


4. Paprika

You’ll also need paprika. Paprika is a little spicy but it doesn’t make the chickpeas too spicy. It gives the chickpeas the perfect spicy touch.


5. Cumin

You’ll also need cumin. It has a nice flavor and has numerous health benefits.


6. Salt & Pepper

You’ll also need a dash of salt and pepper. Feel free to add more salt if you prefer your chickpeas extra salty. I like to keep the sodium to a minimum, so I typically add just a dash of salt to my recipes.


Crispy Roasted Chickpeas

Ingredients
  

  • 1 can chickpeas
  • 1 tsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • dash salt
  • dash pepper

Instructions
 

  • Preheat oven to 350°
  • Rinse the chickpeas in a strainer
  • Combine all seasonings to a bowl: garlic powder, paprika, cumin, salt, and pepper
  • Lay a piece of parchment paper on a baking pan
  • Add rinsed chickpeas to the baking pan
  • Add seasoning mix to the chickpeas
  • Slowly drizzle olive oil on the chickpeas
  • Bake at 350° for 30 minutes

Final Thoughts

This is such an easy recipe to make, and a great meal to meal prep on the weekends for throughout the week. They only take 30 minutes to bake in the oven, and they should come out nice and crispy!
