Incredibly Moist Vegan Chocolate Sweet Potato Cake

For my 22nd birthday I wanted to make a chocolate cake, because it’s a tradition of mine to have a chocolate cake every year on my birthday.


I was inspired by my chocolate sweet potato brownies to make this chocolate sweet potato cake. The sweet potato brownies turned out super fudgy and delicious, so I wanted to create a recipe for chocolate cake using sweet potato as the main ingredient. Sweet potato adds a nice texture to recipes, which is why it’s a great ingredient to use when baking desserts. Here’s the ingredients.


Ingredients

  • Oat Flour: The first ingredient you need to make this gooey chocolate cake is oat flour. Blend rolled oats in a blender to make oat flour. This recipe calls for 1 cup of oat flour.
  • Baking Soda: The next ingredient you need is baking soda. This recipe calls for 1/2 tsp of baking soda.
  • Baking Powder: The next ingredient you need is baking powder. This recipe calls for 1/2 tsp of baking powder.
  • Vanilla Extract: Next, you need vanilla extract. This recipe calls for 1 tsp of vanilla extract.
  • Cocoa Powder: The next ingredient you need is cocoa powder. I used Hershey’s Unsweetened Cocoa Powder. Cocoa powder adds a strong chocolate flavor to this chocolate cake recipe.
  • Applesauce: The next ingredient is applesauce. This recipe calls for 1/2 cup of applesauce. I used unsweetened applesauce.
  • Creamy Peanut Butter: Next, you need creamy peanut butter. Feel free to use crunchy peanut butter instead. This recipe calls for 2 tbsp of creamy peanut butter. Peanut butter makes the chocolate fudgy and delicious.
  • Maple Syrup: To sweeten this chocolate sweet potato cake, you need 2 tbsp of maple syrup. I like using maple syrup because it’s super sweet and adds the perfect amount of sweetness to any recipe.
  • Sweet Potato: The next ingredient you need is sweet potato. This recipe calls for 1/2 cup of sweet potato.
  • Truvia: The next ingredient you need is truvia. This recipe calls for 2 tbsp of truvia, but feel free to use an alternative sweetener, or additional maple syrup.
  • Almond Milk: The last ingredient you need is almond milk, or a nut milk of your choice.

Ingredients
  

  • 1 cup oat flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup applesauce
  • 2 tbsp peanut butter
  • 2 tbsp pure maple syrup
  • 1/2 cup mashed sweet potato
  • 2 tbsp truvia
  • 1/4 cup almond milk

Instructions
 

  • Preheat oven to 350°
  • Combine dry ingredients in one bowl: oat flour, baking soda, baking powder, unsweetened cocoa powder, and truvia
  • Combine all wet ingredients except almond milk to a food processor: vanilla extract, applesauce, pure maple syrup, and mashed sweet potato
  • Blend wet ingredients in food processor
  • Add the dry ingredients to the food processor and blend
  • Lastly, add the 1/4 cup almond milk to the food processor to form a thick and creamy consistency
  • Spray pie pan with olive oil spray
  • Bake in oven at 350° for 30 minutes
  • Let chill for 30-60 minutes and enjoy!

This chocolate cake turned out incredible. It was gooey, fudgy, and moist. I highly recommend making this cake if you’re in need of a delicious chocolate cake recipe. It’s sweet, and perfect with a dollop of whip cream and ice cream on top. I topped my cake with vegan salted caramel ice cream and coco whip.
