- 1 cup oat flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp vanilla extract
- 1/4 cup unsweetened cocoa powder
- 1/2 cup applesauce
- 2 tbsp peanut butter
- 2 tbsp pure maple syrup
- 1/2 cup mashed sweet potato
- 2 tbsp truvia
- 1/4 cup almond milk
Preheat oven to 350°
Combine dry ingredients in one bowl: oat flour, baking soda, baking powder, unsweetened cocoa powder, and truvia
Combine all wet ingredients except almond milk to a food processor: vanilla extract, applesauce, pure maple syrup, and mashed sweet potato
Blend wet ingredients in food processor
Add the dry ingredients to the food processor and blend
Lastly, add the 1/4 cup almond milk to the food processor to form a thick and creamy consistency
Spray pie pan with olive oil spray
Bake in oven at 350° for 30 minutes
Let chill for 30-60 minutes and enjoy!
