Vegan Pumpkin Energy Bites

Here’s how you can make these delicious vegan pumpkin energy bites.

One of my favorite treats to make is energy bites because they’re easy to make and delicious. It’s a quick snack that you can have for work or a snack throughout the day. It’s one of my go-to recipes to make when I want a quick treat.



Ingredients

  • Oat Flour: The first ingredient you need to make these delicious vegan pumpkin energy bites is oat flour. Blend 1 cup of rolled oats in a blender to form oat flour.
  • Vanilla Extract: You need 1/2 teaspoon of vanilla extract.
  • Truvia: You also need 2 tbsp of truvia, or a sweetener of your choice.
  • Canned Pumpkin: The next ingredient you need is 3/4 cup of canned pumpkin.
  • Pumpkin Pie Spice: You also need 1/4 tsp of pumpkin pie spice for this recipe. Pumpkin spice adds a strong pumpkin pie flavor.
  • Cinnamon: The next ingredient you need is cinnamon. Cinnamon is an essential ingredient for pumpkin recipes.
  • Chocolate Chips: You also need chocolate chips. Some of my favorite chocolate chips are Lilly’s baking chips and Enjoy Life’s chocolate chips. They’re both vegan baking chips and super sweet.
  • Creamy Peanut Butter: The next ingredient you need is creamy peanut butter. My two favorite peanut butters are Krema and Smucker’s Creamy Natural Peanut Butter.
  • Rolled Oats: The last ingredient you need is 1/4 cup of rolled oats. Fold 1/4 cup of rolled oats into the pumpkin batter.

Directions

First, preheat the oven to 350°.

Then, blend 1 cup of rolled oats in a blender to form oat flour.

Next, combine the dry ingredients together: oat flour, cinnamon, pumpkin pie spice, and truvia.

Then, combine the wet ingredients in a separate bowl: vanilla extract, canned pumpkin, and creamy peanut butter.

Fold the dry ingredients into the wet ingredients and mix thoroughly.

Then, fold in 1/4 cup of rolled oats and 1 tbsp of chocolate chips.

Next, place a piece of parchment paper on a baking sheet and form 15 balls.

Bake in the oven at 350° for 15 minutes.

Let cool and enjoy!

Ingredients
  

  • 1 cup oat flour
  • 1/2 tsp vanilla extract
  • 2 tbsp truvia
  • 3/4 cup pumpkin puree
  • 1/4 tsp pumpkin pie spice
  • 1/4 tsp cinnamon
  • 1 tbsp chocolate chips (vegan)
  • 1 tbsp creamy natural peanut butter
  • 1/4 cup rolled oats

Instructions
 

  • Preheat oven to 350°
  • Blend 1 cup rolled oats in a food processor to form a flour-like consistency
  • Combine oat flour, cinnamon, pumkin pie spice, and truvi to one bowl
  • Combine wet ingredients in a separate bowl: vanilla extract, pumpkin puree, and creamy natural peanut butter
  • Fold wet ingredients in dry ingredients until batter is evenly mixed
  • Add in 1/4 cup rolled oats
  • Add in 1 tablespoon of chocolate chips
  • Lay parchment paper on baking sheet
  • Form 15 balls
  • Bake in oven at 350° for 15 minutes
  • Let cool and enjoy!
