- 1 cup oat flour
- 1/2 tsp vanilla extract
- 2 tbsp truvia
- 3/4 cup pumpkin puree
- 1/4 tsp pumpkin pie spice
- 1/4 tsp cinnamon
- 1 tbsp chocolate chips (vegan)
- 1 tbsp creamy natural peanut butter
- 1/4 cup rolled oats
Preheat oven to 350°
Blend 1 cup rolled oats in a food processor to form a flour-like consistency
Combine oat flour, cinnamon, pumkin pie spice, and truvi to one bowl
Combine wet ingredients in a separate bowl: vanilla extract, pumpkin puree, and creamy natural peanut butter
Fold wet ingredients in dry ingredients until batter is evenly mixed
Add in 1/4 cup rolled oats
Add in 1 tablespoon of chocolate chips
Lay parchment paper on baking sheet
Form 15 balls
Bake in oven at 350° for 15 minutes
