Healthy Vegan Banana Bread Baked Oats With Walnuts

Here’s how you can make single serving banana bread baked oats that are vegan, healthy, and super delicious. This baked oats recipe is incredibly sweet and easy to make.

I was looking at some of my recipes the other day, and I couldn’t believe that I hadn’t made a banana bread baked oats recipe yet. I know I’ve been sharing a lot of baked oats recipes lately, but they’re truly some of my favorite recipes to make.

It’s such an easy breakfast option, and it’s perfect if you don’t have a lot of time in the mornings. It’s an easy way to spice up traditional oatmeal, and there are endless flavors that you can make.


Vegan Banana Bread Baked Oats

Let’s talk about this vegan banana bread baked oats recipe. I absolutely love banana bread, which is what inspired me to make a banana bread baked oats recipe. Banana bread can be time-consuming, and if you don’t want to make an entire loaf of banana bread, you can easily make this single serving banana bread baked oats recipe.

This recipe can be made in less than 40 minutes, and you only need 8 ingredients: rolled oats, cinnamon, nut milk, banana, walnut pieces, baking powder, pure maple syrup, and chia seeds. These ingredients are inexpensive and easy to find at your grocery store. You can top your banana bread with your favorite toppings, but I recommend adding additional walnuts pieces and banana slices. I also sprinkled a few chia seeds on top and drizzled a little pure maple syrup for some additional sweetness.


Ingredients

  • Rolled Oats: The first ingredient you need is rolled oats. Rolled oats are super inexpensive to buy, and you can buy a large container of rolled oats at the grocery store for just a few dollars. I bought oats from Aldi for a little over $2. Oats are great to have for breakfast because they’re rich in carbs and are super filling. I love eating an oat-packed breakfast because it keeps me full for multiple hours.
  • Cinnamon: The next ingredient you need is cinnamon. Cinnamon is a great spice to add to your breakfast, and it’s my go-to spice for baked oats recipes. Cinnamon has a distinct, strong flavor, so you only need 1/4 tsp of cinnamon for this recipe.
  • Nut Milk: Next, you need 1/2 cup of a nut milk of your choice. I used unsweetened vanilla almond milk, but you can use any plant-based milk that you want. I also really like soy milk, silk milk, and oat milk. You could also use water instead of a plant-based milk, however, I recommend using a nut milk because it makes your baked oats extra creamy.
  • Banana: You also need 1/2 a banana for the oat batter, and an additional 1/4 banana for the topping. Banana is the main ingredient for this banana bread baked oats recipe. Banana is super sweet on its own, which is why I only used 1 tsp of maple syrup for this recipe. I personally don’t love super sweet breakfasts, but you can always add more maple syrup if you want your breakfast extra sweet.
  • Chia Seeds: Next, you need 1/2 tsp of chia seeds. Chia seeds are great to add to your breakfasts because they’re super nutritious and tasty.
  • Walnuts: You also need 1/2 tbsp of walnut pieces. I mixed some walnut pieces in the banana batter, and then sprinkled some additional walnut pieces on top before baking it in the oven.
  • Pure Maple Syrup: Lastly, you need 1 tsp of pure maple syrup for the topping. I drizzled maple syrup on top of my baked oats after they had baked in the oven and it added the perfect amount of sweetness.

Ingredients
  

  • 1/2 cup rolled oats
  • 1/4 tsp cinnamon
  • 1/4 tsp baking powder
  • 1/2 cup nut milk (I used unsweetened vanilla)
  • 1/2 banana
  • 1 tbsp walnut pieces
  • 1/2 tsp chia seeds

Toppings

  • 1 tsp pure maple syrup
  • 1/4 banana

Instructions
 

  • Preheat the oven to 350°
  • Blend the rolled oats, cinnamon, nut milk, banana, baking powder and chia seeds in a blender or NutriBullet to form a thick and creamy consistency
  • Pour the banana bread batter in an oven safe baking dish
  • Add additonal walnut pieces and banana slices on top
  • Bake in the oven for 20 minutes at 350°
  • Let cool and enjoy!
