The Best Vegan Fudgy Pumpkin Pie Bars

Hello everyone and welcome back to my blog! Today I’m sharing a recipe for vegan pumpkin bars. Fall is vastly approaching, and I absolutely love fall treats. Pumpkin pie, pumpkin cookies, pumpkin muffins–you name it. Pumpkin desserts are some of my favorite recipes to make, and I am so excited to make all of the baked goods this fall season. Here’s the recipe for vegan pumpkin pie bars.


Ingredients

  • Canned Pumpkin: The first ingredient you need to make these vegan pumpkin pie bars is canned pumpkin. Canned pumpkin is a great ingredient to use when baking pumpkin desserts because it not only adds a strong pumpkin flavor, but it makes any treat super soft and gooey. These pumpkin pie bars turned out really fudgy with the perfect consistency.
  • Whole Wheat Flour: The next ingredient you need is whole wheat flour. This recipe calls for 1/2 cup of whole wheat flour.
  • Baking Powder: The next ingredient you need is baking powder. This recipe calls for 1/4 tsp of baking powder.
  • Baking Soda: Next is baking soda. This recipe calls for 1/4 tsp of baking soda.
  • Cinnamon: The next ingredient you need is cinnamon. This recipe calls for 1/2 tsp of cinnamon.
  • Maple Syrup: Next, you need 2 tbsp of maple syrup. Maple syrup is one of my favorite sweeteners to use when making dessert recipes because it’s super sweet.
  • Mini Chocolate Chips: The last ingredient you need is mini vegan chocolate chips. For this recipe, I used 2 tsp of mini chocolate chips and sprinkled them on top of the pumpkin bars before baking them in the oven. You could also fold some chocolate chips into the batter, or add more than the recipe calls for!

Fudgy Pumpkin Pie Bars

Ingredients
  

  • 1 cup canned pumpkin
  • 1/2 cup whole wheat flour
  • 1/2 tsp cinnamon
  • 2 tbsp pure maple syrup
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 2 tsp mini chocolate chips (vegan)

Instructions
 

  • Preheat oven to 350°
  • Combine dry ingredients to a large mixing bowl: whole wheat flour, cinnamon, baking powder and baking soda
  • Whisk together wet ingredients in a separate mixing bowl: canned pumpkin, and pure maple syrup
  • Slowly pour wet ingredients into dry ingredients and mix until there is a thick and creamy consistency
  • Lightly grease a brownie pan with olive oil
  • Add the pumpkin batter to the pan
  • Sprinkle mini chocolate chips on top
  • Bake for 20 minutes at 350°
  • Let cool and enjoy!
