Thick and fudgy vegan pumpkin bars.

- 1 cup canned pumpkin
- 1/2 cup whole wheat flour
- 1/2 tsp cinnamon
- 2 tbsp pure maple syrup
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 2 tsp mini chocolate chips (vegan)
Preheat oven to 350°
Combine dry ingredients to a large mixing bowl: whole wheat flour, cinnamon, baking powder and baking soda
Whisk together wet ingredients in a separate mixing bowl: canned pumpkin, and pure maple syrup
Slowly pour wet ingredients into dry ingredients and mix until there is a thick and creamy consistency
Lightly grease a brownie pan with olive oil
Add the pumpkin batter to the pan
Sprinkle mini chocolate chips on top
Bake for 20 minutes at 350°
Let cool and enjoy!
