Healthy Vegan Chocolate Cherry Baked Oats Made With Cocoa Powder

Hello everyone and welcome back to my blog! Today I’m back to share another baked oats recipe. I absolutely love baked oats and had to make a recipe for chocolate cherry baked oats.

It’s actually one of my favorite combinations, and it’s highly underrated. Like my other baked oats recipes, this is a super quick recipe that you can easily. This recipe calls for eight ingredients including rolled oats, banana, frozen cherries, pure maple syrup, nut milk, unsweetened cocoa powder, baking powder, and mini vegan chocolate chips.

I picked up a bag of frozen cherries from the grocery store the other day with this recipe in mind. I absolutely love cherries and I haven’t made any recipes that contain cherries yet. This is a great sweet breakfast to make that’s filling and low in sugar. Pure maple syrup is a natural sweetener, and you only need 2 tsp of chocolate chips (vegan) for this recipe.

This is the perfect breakfast to make in the mornings when you have a little extra time. This recipe spices up traditional oatmeal, and it’s worth trying out if you are a fan of baked oats recipes.


Ingredients

  • Rolled Oats: The first ingredient you need to make this chocolate cherry baked oats recipe is rolled oats. Rolled oats are great to have in the mornings for breakfast because they’re super filling and keep you full for multiple hours. I use them in a lot of my recipes because they’re also super affordable–I bought a large container of rolled oats for ~$2.19 from Aldi. For this recipe, you need 1/2 cup of rolled oats (instant oats work as well), and you want to blend them in a blender or NutriBullet to make your oat batter.
  • Banana: The next ingredient you need is 1/2 of a ripe banana. You want to use a banana that’s a bit brown and has a few brown spots. Green bananas typically aren’t as sweet, which is why I always try and use older bananas for my recipes.
  • Frozen Cherries: The next ingredient you need is frozen cherries. Frozen cherries are super sweet and taste absolutely incredible in recipes. I haven’t bought cherries in a while, but I’ve seriously been missing out. They’re sweet, crunchy, and go incredibly well with chocolate. I blended up 1/3 cup of frozen cherries and baked it into the oatmeal, and added additional cherries on top before baking it in the oven.
  • Pure Maple Syrup: The next ingredient you need is 1 tsp of pure maple syrup. Maple syrup is my go-to sweeteners to use because it’s a natural sweetener and it’s super sweet. You can add more maple syrup if you’d like, but I prefer breakfasts that aren’t overly sweet.
  • Nut Milk: You also need 1/2 cup of your favorite nut milk. I used unsweetened vanilla almond milk, but you could also use soy milk, silk milk, or oat milk! Using a nut milk makes the baked oats creamier, which is why I always opt to use a plant-based milk instead of water.
  • Mini Semi Sweet Vegan Chocolate Chips: The next ingredient you need is mini vegan chocolate chips. You can get vegan chocolate chips at pretty much every grocery store, but I prefer using the mini baking chips for recipes. They’re super sweet and add the perfect hint of chocolate to any recipe!
  • Baked Powder: You also need 1/4 tsp of baking powder. This helps the baked oats rise.
  • Cocoa Powder: The last ingredient you need is 1/2 tbsp of cocoa powder. I used unsweetened cocoa powder, but you could use a sweetened cocoa powder as well.

Ingredients
  

  • 1/2 cup rolled oats
  • 1/2 banana
  • 1/3 cup frozen cherries (about 8 cherries)
  • 1 tsp pure maple syrup
  • 1/2 cup nut milk (I used unsweetened vanilla)
  • 1 tsp mini semi sweet vegan chocolate chips
  • 1/2 tbsp cocoa powder (I used Hershey's unsweetened dark cocoa powder)
  • 1/4 tsp baking powder

Toppings

  • 1/4 cup frozen cherries
  • 1 tsp mini semi sweet vegan chocolate chips

Instructions
 

  • Preheat the oven to 350°
  • Blend your rolled oats, banana, pure maple syrup, baking powder, cocoa powder, frozen cherries & nut milk in a blender or NutriBullet to form a thick and creamy consistency
  • Pour your batter in a an oven safe baking dish
  • Add your frozen cherries and mini chocolate chips on top
  • Bake in the oven for 40 minutes at 350°
  • Let cool and enjoy!
