Vegan Potato Tofu Scramble (Hash)

Hello everyone and welcome back to my blog! I’m super excited to share this recipe with you all today, because it was soooo yummy and super easy to make.
When I first adopted a vegan diet and started eating more plant-based foods, I ran out of meal ideas. I didn’t like salads very much, and aside from your typical plant-based meals such as pasta, sandwiches, and oatmeal, I didn’t really know what else to make.
As time went on, I started making more recipes and branching out on the foods I was eating. It’s also one of the reasons I launched my vegan food blog a few months ago. I wanted to share all of the yummy vegan recipes that I was making.
Some of my favorite foods to eat include tofu, potatoes (the golden potatoes specifically), and zucchini. If you love any or all of these foods, then you will definitely love this recipe. This is a vegan tofu potato hash/scramble made with yummy seasonings and spices.
This recipe is super easy to make and it’s inexpensive too! All of these ingredients you can find at your local grocery store. Let’s dive into the ingredients you’ll need to make this tasty recipe.
Ingredients you’ll need:
1. Golden Potatoes
The first ingredient you’ll need to make this tofu potato hash is golden potatoes. I personally prefer the golden potatoes over traditional potatoes, however, any potato will do. For this recipe, you’ll need 1 cup of potato cubes. After you’ve cut the potatoes into small cubes, you’ll want to pop them in the microwave for four minutes to soften them a bit.
2. Tofu
The next ingredient you’ll need is tofu. Tofu is one of my favorite foods to eat as a vegan because it’s a great source of protein. Like the potatoes, you’ll want to cut the tofu block into small cubes. You’ll need 1 cup of tofu.
Tofu is one of the foods I eat regularly, and you can buy it at the grocery store for less than $2. It’s definitely budget-friendly and great for anyone looking to save money at the grocery store.
3. Nutritional Yeast
Next, you’ll need nutritional yeast. If you’ve never tried nutritional yeast before, you’re seriously missing out. Nutritional yeast is tasty and it’s almost like a cheesy alternative to traditional cheese. Nonetheless, it’s a great seasoning to use and adds additional flavor to this vegan scramble.
4. Olive Oil
You can also add olive oil, but this is a completely optional step. I like to add a little bit of olive oil to the pan so it doesn’t stick, but feel free to omit this ingredient from the recipe.
5. Chopped Zuchinni
Next, you’ll need chopped zucchini. One of my favorite vegetables lately has been zucchini, and I’ve been eating so much of it. The great thing about zucchini is that it’s really inexpensive to buy, which is great for me. It’s also a really yummy vegetable and is perfect for this recipe. You could also add onions, bell peppers, or another vegetable of your choice.
6. Spices: Garlic Powder, Onion Powder, Turmeric, Salt & Pepper
Lastly, you’ll need an assortment of seasonings and spices. The first spice I added was garlic powder, which is my go-to spice whenever I’m making some sort of dish. I also always add onion powder, because I really like the flavor. Then, I added turmeric, which has a bright orange-yellow hue. Lastly, I added a dash of salt and pepper. Add as much salt and pepper as you’d like!

Vegan Potato Tofu Scramble
Ingredients
- 1 cup chopped golden potatoes
- 1 cup chopped tofu
- 1 tbsp nutritional yeast
- 1 tsp olive oil
- 1 cup chopped zucchini
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp turmeric
- dash salt & pepper
Instructions
- Cut golden potatoes into cubes
- Cook potato cubes in the microwave for 4 minutes
- Cut tofu block into cubes
- Cut zucchini into small pieces
- Add potato cubes, tofu cubes and zuchinni cubes to a pan
- Add olive oil, nutritional yeast, garlic powder, onion powder, turmeric, salt and pepper to the pan
- Stir to combine
- Cook on low-medium heat for 15 minutes
Notes
Final Thoughts
This recipe is one of my new favorites to make because of how easy and tasty it is. It’s a recipe that calls for around 10 ingredients, and can be made in less than 30 minutes with prep time and all. This is a great recipe to make for breakfast, lunch, or dinner. This tofu potato hash/scramble was so good and I’ll definitely be making it again soon. It’s a recipe that anyone can enjoy!
