These protein muffins are great for breakfast, dessert, or as a snack throughout the day. They’re moist, soft, sweet, and delicious.
Ingredients
- Oat Flour: The first ingredient you need is oat flour. To make oat flour, blend rolled oats or instant oats in a NutriBullet or blender. Blend until it forms a flour-like consistency. Oats are a great ingredient to use in recipes because it’s really affordable.
- Chocolate Protein Powder: The next ingredient you need is a chocolate protein powder of your choice. I used Orgain chocolate protein powder, which is a vegan protein powder.
- Baking Powder & Baking Powder: You need 1 tsp baking powder and 1/2 tsp baking soda. These two ingredients help the muffins rise.
- Banana: The next ingredient you need is banana. Banana is naturally super sweet, and it adds sweetness to the muffins. Banana also makes the muffins moist.
- Nut Milk: The next ingredient you need is a nut milk of your choice. I used unsweetened vanilla almond milk to make these muffins. I like using nut milk because it’s creamy, but you can use water as well.
- Chocolate Chips: The next ingredient you need is vegan chocolate chips. This recipe calls for 1 tbsp of chocolate chips, but feel free to use as many as you want. I also topped my muffins off with additional chocolate chips. You can also fold chocolate chips into your batter.
- Truvia Baking Blend: The last ingredient need is truvia baking blend. You need 2 tsp of truvia for this recipe. Truvia adds extra sweetness to the muffins, but you can use maple syrup, agave, or an alternative sweetener as well.
