How to make super moist and fluffy chocolate chip banana oat protein muffins.

Ingredients
  

  • 1/2 cup oat flour
  • 3 tbsp chocolate protein powder (Orgain)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 banana
  • 1/4 cup nut milk
  • 1 tbsp chocolate chips (vegan)
  • 2 tsp truvia baking blend

Instructions
 

  • Preheat oven to 350°
  • Add dry ingredients to a large mixing bowl: oat flour, chocolate protein powder, baking powder, baking soda and truvia baking blend
  • Mash banana and whisk together wet ingredients in a separate bowl: banana and nut milk
  • Slowly pour wet ingredients into dry ingredients
  • Lightly grease muffin pan with olive oil
  • Add batter to muffin pan to form 4 medium sized muffins
  • Sprinkle chocolate chips on top of each muffin
  • Bake in oven at 350° for 14 minutes
  • Let cool and enjoy!
