Vegan Pumpkin Pie Baked Oats

Hello everyone and welcome back to my blog! I I typically start my mornings off with a hot cup of coffee followed by a delicious breakfast. As you’ve probably seen everywhere baked oats have become a super popular breakfast. I’ve already made three baked oats recipes myself including fluffy blueberry banana baked oats, cake batter baked protein oats, and chocolate peanut butter baked oats. However, I couldn’t stop there, because they’re too good not to make more flavors!

So, I decided to make pumpkin pie baked oats. I know it’s not fall and pumpkin-flavored treats are typically more popular during the fall season, however, I personally love pumpkin, and I didn’t think I could wait until fall to make another pumpkin recipe.

This recipe is super simple to make, and calls for a few simple ingredients: rolled oats, baking powder, maple syrup, canned pumpkin, pumpkin pie spice, nut milk, and mini semi sweet vegan chocolate chips. It also is a really easy breakfast to make in the morning. Aside from a few minutes to prep the pumpkin baked oats batter, it takes around 20-25 minutes to bake in the oven.


Ingredients

  • Rolled or Quick Oats: The first ingredient you need is rolled or quick oats, which is the main ingredient for this recipe. Oats are one of my favorite ingredients to bake with because they’re super affordable. I buy a large container of rolled oats from the grocery store for just a few dollars, and it lasts me multiple weeks. Oats are also really filling and great to have before heading off to work or school. They keep you full and give you energy to take on the day!
  • Baking Powder: Next you need 1/4 tsp of baking powder. Baking powder is great to use to make baked goods if you want your dessert to rise. I typically use baking powder in all of my mug cake recipes, baked oats recipes, and any bread that I make.
  • Pure Maple Syrup: You also need pure maple syrup. This recipe calls for 2 tsp of pure maple syrup to sweeten the pumpkin pie baked oats a bit. I don’t typically add sugar to my breakfast recipes, however, pumpkin isn’t very sweet, so I wanted to use some sort of sweetener to sweeten this baked oats recipe. I love using maple syrup because it’s super sweet and you don’t need to use too much. It’s also a natural sweetener and one of my go-to ingredients to use for all of my dessert recipes and baked oats recipes.
  • Canned Pumpkin: The next ingredient you need is canned pumpkin. Canned pumpkin is another inexpensive ingredient and is great to use for baking. I’ve use canned pumpkin in some of my brownie and bread recipes.
  • Pumpkin Pie Spice: The only spice you need for this recipe is pumpkin pie spice. I really wanted the baked oats to have a strong pumpkin flavor, so I added 1/2 tsp of pumpkin pie spice to this recipe.
  • Nut Milk: You also need a nut milk of your choice. I used unsweetened vanilla almond milk for this recipe, but you can use your nut milk of choice. Some of my other favorite plant-based milks include soy milk, silk milk, and oat milk. Nut milk makes the baked oats creamier.
  • Mini Semi Sweet Vegan Chocolate Chips: The last ingredient you need is mini semi sweet vegan chocolate chips. I topped my pumpkin baked oats with 1 tsp of mini chocolate chips before baking it in the oven. This added additional sweetness and created the perfect pumpkin chocolate baked oats concoction. You can add more chocolate chips for a sweeter breakfast.

Ingredients
  

  • 1/2 cup rolled oats
  • 1/4 tsp baking powder
  • 2 tsp pure maple syrup (plus more for the topping)
  • 3 tbsp canned pumpkin
  • 1/2 tsp pumpkin pie spice
  • 1/2 cup nut milk (I used unsweetened vanilla almond milk)
  • 1 tsp mini semi sweet vegan chocolate chips

Instructions
 

  • Preheat the oven to 350°
  • Add your rolled or quick oats, baking powder, pure maple syrup, canned pumpkin, pumpkin pie spice & nut milk to a blender or NutriBullet to form a thick and creamy consistency
  • Pour your pumpkin batter in an oven safe baking dish (I used a 6 oz ramekin)
  • Sprinkle your mini chocolate chips on top
  • Bake in the oven for about 23 minutes at 350°
  • Let cool and enjoy!
