- 1/2 cup rolled oats
- 1/4 tsp baking powder
- 2 tsp pure maple syrup (plus more for the topping)
- 3 tbsp canned pumpkin
- 1/2 tsp pumpkin pie spice
- 1/2 cup nut milk (I used unsweetened vanilla almond milk)
- 1 tsp mini semi sweet vegan chocolate chips
Preheat the oven to 350°
Add your rolled or quick oats, baking powder, pure maple syrup, canned pumpkin, pumpkin pie spice & nut milk to a blender or NutriBullet to form a thick and creamy consistency
Pour your pumpkin batter in an oven safe baking dish (I used a 6 oz ramekin)
Sprinkle your mini chocolate chips on top
Bake in the oven for about 23 minutes at 350°
Let cool and enjoy!
