Ingredients
  

  • 1/2 cup rolled oats
  • 1/4 tsp baking powder
  • 2 tsp pure maple syrup (plus more for the topping)
  • 3 tbsp canned pumpkin
  • 1/2 tsp pumpkin pie spice
  • 1/2 cup nut milk (I used unsweetened vanilla almond milk)
  • 1 tsp mini semi sweet vegan chocolate chips

Instructions
 

  • Preheat the oven to 350°
  • Add your rolled or quick oats, baking powder, pure maple syrup, canned pumpkin, pumpkin pie spice & nut milk to a blender or NutriBullet to form a thick and creamy consistency
  • Pour your pumpkin batter in an oven safe baking dish (I used a 6 oz ramekin)
  • Sprinkle your mini chocolate chips on top
  • Bake in the oven for about 23 minutes at 350°
  • Let cool and enjoy!
