Vegan Apple Cinnamon Muffins
Happy Friday! It’s officially the weekend, which is always a good feeling. As I’ve been making a lot of pumpkin-flavored desserts lately, I wanted to switch things up and make another one of my favorite fall desserts: apple cinnamon muffins.

I absolutely love apple-flavored desserts, especially for the fall. From apple pies, to muffins, to donuts, fruity desserts are the absolute best to make.
It’s been raining all day today, so I thought it was the perfect time to make a delicious treat. These vegan apple cinnamon muffins have no dairy or oil. Now, let’s get into the things you’ll need to make these tasty vegan apple cinnamon muffins.
Ingredients
- Oat Flour: The first ingredient you’ll need to make these vegan apple cinnamon muffins is oat flour. To make oat flour, blend one cup of rolled oats in a blender or NutriBullet until it forms a flour-like consistency. Blend until smooth.
- Baking Soda: The next ingredient is baking soda. You need 1/2 teaspoon of baking soda to make these vegan muffins. Baking soda helps the muffins rise and makes them a bit fluffier.
- Cinnamon: The next ingredient is cinnamon. Cinnamon and apple go really well together, so I added cinnamon to these apple muffins. You need 1/2 teaspoon of cinnamon for this recipe. I also sprinkled some more cinnamon on top of the muffins before putting them in the oven. Cinnamon is a flavorful spice and is one of my favorite spices to use for desserts.
- Truvia: Next, you need truvia or an alternative sweetener. Truvia is a blend of sugar and natural sweetener, but you can use sugar or maple syrup in this recipe as well. For this recipe, you need two tablespoons of sweetener. I typically use either Truvia or maple syrup as my sweetener of choice for my dessert recipes.
- Almond Milk: The next ingredient is almond milk, or a plant-based milk alternative. I like to use almond milk in my dessert recipes, but you can also use cashew milk, soy milk, or oat milk. You need 1/4 cup of plant-based milk as your liquid base for these muffins.
- Vanilla Extract: The next ingredient is vanilla extract. You only need a splash of vanilla, because a little goes a long way.
- Applesauce: Next, you need applesauce. The applesauce helps give the muffins a strong apple flavor. These muffins seriously melt in your mouth and are soft and delicious.
- Banana: Similar to applesauce, banana adds sweetness to the muffins. Mash 1/2 a banana in a bowl and combine it to the remaining wet ingredients.
- Apple: The final ingredient is one medium apple. I chopped the apple up in small chunks and folded the apple chunks in the muffin batter. The apple chunks will caramelize in the oven and give your apple muffins a strong apple flavor. You can also add apple chunks on top of the muffins before baking them. I love apples, so I like adding a few extra apple chunks on top of each muffin after filling each tin with muffin batter.
How to make these muffins:
First, preheat the oven to 350°.
Then, blend one cup of rolled oats in a blender or NutriBullet until it forms a flour-like consistency.
Next, combine all the dry ingredients in one bowl: oat flour, baking soda, cinnamon, and Truvia.
Then, combine all the wet ingredients to a separate bowl: almond milk, vanilla extract, applesauce, and banana.
Slowly add the dry ingredients to the wet ingredients and mix thoroughly.
Fold in the apple chunks to the muffin batter.
Spray your muffin pan with olive oil spray.
Fill your muffin tin (recipe yields 8 muffins).
Bake at 350° for 15 minutes.
Let cool and enjoy!

Ingredients
- 1 cup oat flour
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 2 tbsp truvia
- 1/4 cup almond milk
- 1/2 tsp vanilla extract
- 1/2 cup applesauce
- 1/2 mashed banana
- 1 chopped apple
Instructions
- Preheat oven to 350°
- Blend rolled oats in a blender or NutriBullet until it forms a flour-like consistency
- Combine dry ingredients to one bowl: oat flour, baking soda, cinnamon, and truvia
- Combine wet ingredients to a separate bowl: almond milk, vanilla extract, applesauce, and mashed banana
- Slowly fold dry ingredients in wet ingredients
- Fold in chopped apple
- Spray muffin pan with olive oil spray
- Form eight muffins
- Dash of cinnamon on top of each muffin
- Bake at 350° for 15 minutes
- Let cool and enjoy!
Notes
After the muffins finish cooling, feel free to add more cinnamon and apple chunks on top. Enjoy with a glass of almond milk.
