Vegan Vanilla Sprinkle Protein Cookies

Here’s how you can make these delicious vegan vanilla sprinkle protein cookies.

I recently made these delicious vegan protein cookies with rainbow sprinkles on top. They turned out so good, and I can’t wait to make them again soon. I used Orgain’s vanilla protein powder for this recipe, which is one of my favorite vegan protein powders to use.




Ingredients

  • Rolled Oats: For this recipe, you need 1/2 cup rolled oats. Blend the oats in a blender to form oat flour.
  • Maple Syrup: To sweeten these cookies, you need maple syrup. This recipe calls for 3 tbsp maple syrup. Feel free to use more for extra sweet cookies!
  • Baking Soda: Baking soda is an essential ingredient in cookie recipes. This recipe calls for 1/2 tsp baking soda.
  • Rainbow Sprinkles: The next ingredient you need is rainbow sprinkles. Sprinkles are fun to add to cookies because it adds a pop of color and makes the cookies sweeter. This recipe calls for 1/2 tsp rainbow sprinkles, but feel free to add as many as you’d like!
  • Vanilla Extract: For this batch of vegan vanilla protein cookies, you need 1/2 teaspoon of vanilla extract. A splash of vanilla goes a long way.
  • Peanut Butter: Next, you need 2 tbsp creamy peanut butter. Peanut butter makes the cookies soft and delicious, and adds a strong peanut flavor.
  • Almond Milk: For this recipe, you need 1/4 cup of nut milk. I used unsweetened vanilla almond milk, but you can use your favorite nut milk for this recipe.
  • Protein Powder: The last ingredient you need is 1 scoop of vanilla protein powder. I used Orgain’s vanilla protein powder, but feel free to use your favorite vanilla protein powder for this recipe.

Directions:

First, preheat your oven to 350°

Next, blend your rolled oats in a blender or food processor to form oat flour.

Then, combine all of the dry ingredients in one bowl. This includes the oat flour, baking soda, and vanilla protein powder.

In a seperate bowl, add all of the wet ingredients. This includes the maple syrup, peanut butter, vanilla extract, and almond milk.

Fold the dry ingredients in the wet ingredients.

After your batter is fully mixed, you then fold in the rainbow sprinkles. Add as many sprinkles as you want!

Then, spray a baking sheet and for eight cookies with the cookie batter.

Pop the cookies in the oven at 350° for about 13 minutes.

Let the cookies cool and enjoy!

  • Preheat oven to 350°
  • Blend 1/2 cup rolled oats in blender to form oat flour
  • Combine dry ingredients in one bowl: oat flour, baking soda, and protein powder
  • Combine wet ingredients to a seperate bowl: maple syrup, peanut butter, vanilla extract, and almond milk
  • Slowly fold dry ingredients in wet ingredients
  • Fold in sprinkles
  • Spray baking sheet with olive oil spray
  • Make eight cookies
  • Bake in oven at 350° for 13 minutes
  • Let cool and enjoy!
