- 1 cup oat flour
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 2 tbsp truvia
- 1/4 cup almond milk
- 1/2 tsp vanilla extract
- 1/2 cup applesauce
- 1/2 mashed banana
- 1 chopped apple
Preheat oven to 350°
Blend rolled oats in a blender or NutriBullet until it forms a flour-like consistency
Combine dry ingredients to one bowl: oat flour, baking soda, cinnamon, and truvia
Combine wet ingredients to a separate bowl: almond milk, vanilla extract, applesauce, and mashed banana
Slowly fold dry ingredients in wet ingredients
Fold in chopped apple
Spray muffin pan with olive oil spray
Form eight muffins
Dash of cinnamon on top of each muffin
Bake at 350° for 15 minutes
Let cool and enjoy!
