Ingredients
  

  • 1 cup oat flour
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 2 tbsp truvia
  • 1/4 cup almond milk
  • 1/2 tsp vanilla extract
  • 1/2 cup applesauce
  • 1/2 mashed banana
  • 1 chopped apple

Instructions
 

  • Preheat oven to 350°
  • Blend rolled oats in a blender or NutriBullet until it forms a flour-like consistency
  • Combine dry ingredients to one bowl: oat flour, baking soda, cinnamon, and truvia
  • Combine wet ingredients to a separate bowl: almond milk, vanilla extract, applesauce, and mashed banana
  • Slowly fold dry ingredients in wet ingredients
  • Fold in chopped apple
  • Spray muffin pan with olive oil spray
  • Form eight muffins
  • Dash of cinnamon on top of each muffin
  • Bake at 350° for 15 minutes
  • Let cool and enjoy!
