Healthy Vegan Pumpkin Granola Recipe

Hello everyone, happy Monday! Today I’m back to share with you all this delicious healthy vegan pumpkin granola recipe. As fall is coming to a close and we’re starting to enter the winter months, I want to get my last few fall recipes up on my blog. Thus, it’s time to share my pumpkin granola recipe with all of you!

Granola is one of my favorite snacks to make because you can seriously put it in everything. You can add it to your cereal, smoothie bowls, ice cream, yogurt (vegan of course) and so much more. Granola adds some extra crunch which is why I love it so much. It’s a great treat to have when you’re in the mood for something that’s both salty and sweet! This granola is sweet from the maple syrup, but also salty from the pistachios and pecans. It has the perfect combination of salty and sweet.

I already have a granola recipe up on my blog, which I highly recommend checking out, (especially if you prefer original granola over pumpkin granola) but in honor of fall I wanted to make a pumpkin-flavored granola recipe. I love pumpkin, so what better way to share my love of pumpkin with you all then to make some pumpkin granola?

What I love about this recipe is that this granola is super healthy and made with all-natural ingredients. It’s also pretty low in sugar. For the whole batch of granola, I only used two tablespoons of maple syrup. While it’s still sugar, it’s natural sugar which is a great alternative to table sugar and high fructose corn syrup.



It’s such a quick and easy recipe to make, and a great snack to prep for the week. I like to prep a batch of granola on the weekends so I can have it throughout the week to sprinkle on top of my smoothie bowls I have for breakfast.


Ingredients you’ll need:

1. Rolled Oats

The first ingredient you’ll need to make this delicious vegan pumpkin granola is of course rolled oats. Rolled oats is one of my favorite ingredients to use in dessert and snack recipes because oats are high in carbs and keep you full for long periods of time.

Oats are a staple of mine, and they’re also ridiculously cheap. You can buy a large container of rolled oats at the grocery store for just a few dollars. It’s also great for college students who are on a budget and don’t want to spend a ton of money on groceries.


2. Pumpkin Pie Spice

The next ingredient you’ll need is pumpkin pie spice. I love pumpkin pie spice because it’s super flavorful and adds the perfect pumpkin spice to this granola recipe. The spices all come together when baking in the oven to create the perfect concoction.


3. Cinnamon

Up next is cinnamon. Like the pumpkin pie spice, cinnamon is another spice that gives this batch of granola a great flavor. Cinnamon is not only a powerful spice to use in recipes, but it has numerous health benefits. It’s one of my go-to spices for dessert recipes, and this pumpkin granola recipe is no exception.


4. Vanilla Extract

For this batch of granola, you’ll also need a splash of vanilla extract. 1/2 a teaspoon to be exact.


5. Pumpkin Puree

The next ingredient you’ll need is pumpkin puree. I used 1/2 can of pumpkin puree for this recipe. The granola turned out crunchy, but soft at the same time. The pumpkin puree is essential to give the granola the perfect pumpkin flavor. Pumpkin puree is another great ingredient to use because it has no added sugar–it’s simply pumpkin.


6. Maple Syrup

The sweetener you’ll need to make this pumpkin granola is maple syrup. Maple syrup is a great sweetener to use for dessert recipes because it’s natural sugar, so although it’s still sugar, it’s a bit healthier than traditional table sugar and high fructose corn syrup.

You’ll also only need two tablespoons of maple syrup for this entire batch. Feel free to use only one tablespoon if you want the granola a bit less sweet and lower in sugar. I like sweet granola, but I also love granola that isn’t overly sweet. Either way, this granola is super delicious and definitely worth making.


7. Chopped Pecans & Pistachios

The last ingredient you’ll need to make this pumpkin granola is 1/4 cup of chopped pecans and pistachios. I chopped up some pecans and threw some pistachios in the mix for a variety of nuts. You can also add seeds or another nut to this granola. I chose to use pecans and pistachios, but you could also use cashews, walnuts, chia seeds, pumpkin seeds, and even chocolate chips if you want to throw some chocolate into the mix!




How to make pumpkin granola:

First, preheat the oven to 350°

Next, combine all the dry ingredients to one bowl: rolled oats, pumpkin pie spice, cinnamon, and the pecans and pistachios.

Then, combine the wet ingredients to a separate bowl: pumpkin puree, vanilla extract, and maple syrup.

Slowly fold the dry ingredients into the wet ingredients and mix well.

Add a piece of parchment paper to a baking sheet.

Add the granola mixture to the baking sheet.

Bake in oven at 350° for 30 minutes.


Let cool and enjoy!

Ingredients
  

  • 1 cup rolled oats
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/2 cup pumpkin puree
  • 2 tbsp maple syrup
  • 1/4 cup chopped pecans & pistachios

Instructions
 

  • Preheat oven to 350°
  • Combine all the dry ingredients to one bowl: rolled oats, pumpkin pie spice, cinnamon, and the pecans and pistachios.
  • Combine all the wet ingredients to a separate bowl: pumpkin puree, vanilla extract, and maple syrup
  • Slowly fold the dry ingredients to the wet ingredients and mix well
  • Lay a piece of parchment paper to a baking sheet
  • Add the granola mixture to the baking sheet
  • Bake at 350° for 30 minutes
  • Let cool and enjoy!
