Healthy Vegan Pumpkin Granola

How to make deliciously flavorful pumpkin granola that is vegan, healthy, and nutritious!

- 1 cup rolled oats
- 1/2 tsp pumpkin pie spice
- 1/4 tsp cinnamon
- 1/2 tsp vanilla extract
- 1/2 cup pumpkin puree
- 2 tbsp maple syrup
- 1/4 cup chopped pecans & pistachios
Preheat oven to 350°
Combine all the dry ingredients to one bowl: rolled oats, pumpkin pie spice, cinnamon, and the pecans and pistachios.
Combine all the wet ingredients to a separate bowl: pumpkin puree, vanilla extract, and maple syrup
Slowly fold the dry ingredients to the wet ingredients and mix well
Lay a piece of parchment paper to a baking sheet
Add the granola mixture to the baking sheet
Bake at 350° for 30 minutes
Let cool and enjoy!
