Healthy Vegan Pumpkin Granola

How to make deliciously flavorful pumpkin granola that is vegan, healthy, and nutritious!

Ingredients
  

  • 1 cup rolled oats
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/2 cup pumpkin puree
  • 2 tbsp maple syrup
  • 1/4 cup chopped pecans & pistachios

Instructions
 

  • Preheat oven to 350°
  • Combine all the dry ingredients to one bowl: rolled oats, pumpkin pie spice, cinnamon, and the pecans and pistachios.
  • Combine all the wet ingredients to a separate bowl: pumpkin puree, vanilla extract, and maple syrup
  • Slowly fold the dry ingredients to the wet ingredients and mix well
  • Lay a piece of parchment paper to a baking sheet
  • Add the granola mixture to the baking sheet
  • Bake at 350° for 30 minutes
  • Let cool and enjoy!
