Hello everyone and welcome back to my blog! I’m super excited to share another PUMPKIN recipe with you all! As you’ve probably seen, I’ve been making a lot of fall recipes lately. I really love pumpkin-flavored treats and I am full-swing into the fall spirit.
Since everyone’s been sharing their pumpkin/fall recipes, I thought that it was time to share some of mine. My recipes are all vegan, plant-based, healthy, and super easy to make.
For today’s recipe, we’re making healthy pumpkin spice cookies. These are perfect for breakfast, and are made with ingredients including oat flour, canned pumpkin, applesauce, pumpkin pie spice, cinnamon, and mini (vegan) chocolate chips.
I use oats in most of my recipes, and it truly is the perfect ingredient to use when baking. It’s also really affordable, which is perfect for anyone looking to save some money on baking supplies.
The recipe yields 5 cookies and only takes 10 minutes to bake in the oven. I added mini vegan chocolate chips on top for some additional sweetness, but you could also add peanut butter. Enjoy them with a tall glass of nut milk.
Ingredients You’ll Need:
1. Oat Flour
The first ingredient you’ll need to make these delicious pumpkin spice cookies is oat flour. Oat flour can be easily made by blending rolled oats in a blender or NutriBullet to form a flour-like consistency. You’ll need 1/2 cup of oat flour as well as 1/4 cup of rolled oats for this recipe. I folded 1/4 cup of rolled oats into the cookie batter.
2. Canned Pumpkin
Next, you’ll need canned pumpkin. Although canned pumpkin isn’t very sweet, it adds a nice strong pumpkin flavor to these cookies and makes them more moist. Pumpkin is a must for the fall, and these cookies are the perfect pumpkin treat to make.
3. Applesauce
The next ingredient you’ll need is applesauce. Because pumpkin isn’t very sweet, I wanted to add some applesauce to this recipe to add additional sweetness. I also used pure maple syrup (see below), but using fruit in recipes is a great way to limit the added sugar in your recipes. I used unsweetened applesauce because applesauce is super sweet on its own.
4. Pumpkin Pie Spice
Next, you’ll need pumpkin pie spice. They’re selling pumpkin pie spice everywhere now, so get it while you can. It’s a great spice to add to any pumpkin recipe that you want to make. I’ve added it to almost all of my pumpkin recipes thus far, and it adds a nice pumpkin flavor.
5. Cinnamon
Cinnamon and pumpkin pie spice go hand in hand. I absolutely love cinnamon and I add it to pretty much every sweet breakfast/dessert that I make. Like pumpkin pie spice, it has a really strong, distinct flavor and is perfect for any fall treat that you’re making.
6. Pure Maple Syrup
You’ll also need pure maple syrup. I added 2 tbsp of pure maple syrup to these cookies so that they were a little sweeter. I didn’t want to make them too sweet, as these are breakfast cookies, but I think that they turned out perfect. I love using maple syrup because it’s a natural sweetener and it’s super sweet.
7. Mini Chocolate Chips (Vegan)
Next, you’ll need mini chocolate chips. You can get vegan chocolate chips pretty much anywhere, and I bought mine from a local grocery store. They’re a great topping for these pumpkin spice cookies and add additional sweetness as well.
8. Rolled Oats
Lastly, you’ll need 1/4 cup of rolled oats. After I made the pumpkin spice cookie batter, I folded in 1/4 cup of rolled oats. Rolled oats are rich in carbs and super filling, and it’s one of my favorite foods to eat for breakfast.

Breakfast Pumpkin Spice Cookies Made With Oat Flour
Ingredients
- 1/2 cup oat flour
- 1/4 cup canned pumpkin
- 2 tbsp unsweeteened applesauce
- 1 tsp pumpkin pie spice
- 1/4 tsp cinnamon
- 2 tbsp pure maple syrup
- 1 tsp mini chocolate chips (vegan)
- 1/4 cup rolled oats
Instructions
- Preheat oven to 350°
- Combine dry ingredients in a mixing bowl: oat flour, rolled oats, pumpkin pie spice and cinnamon
- Whisk together wet ingredients in a separate mixing bowl: canned pumpkin, unsweetened applesauce and pure maple syrup
- Lightly grease a baking sheet
- Form cookies on baking sheet
- Sprinkle mini chocolate chips on top
- Bake in oven at 350° for 10 minutes
- Let cool and enjoy!

Final Thoughts
This is the perfect healthy breakfast/snack to make when you’re in need of something quick for on the go. I absolutely love making breakfast cookies because they’re tasty, healthy, and super filling.
