- 1/2 cup oat flour
- 1/4 cup canned pumpkin
- 2 tbsp unsweeteened applesauce
- 1 tsp pumpkin pie spice
- 1/4 tsp cinnamon
- 2 tbsp pure maple syrup
- 1 tsp mini chocolate chips (vegan)
- 1/4 cup rolled oats
Preheat oven to 350°
Combine dry ingredients in a mixing bowl: oat flour, rolled oats, pumpkin pie spice and cinnamon
Whisk together wet ingredients in a separate mixing bowl: canned pumpkin, unsweetened applesauce and pure maple syrup
Lightly grease a baking sheet
Form cookies on baking sheet
Sprinkle mini chocolate chips on top
Bake in oven at 350° for 10 minutes
Let cool and enjoy!
