Vegan Blueberry Muffin Baked Oats

Hello everyone and welcome back to my blog! I’m back with another baked oats recipe. Today I’m sharing a recipe for blueberry muffin baked oats with a maple crumble topping. I love fruity breakfasts and wanted to spice up this baked oats recipe with a fun and tasty crumble topping.

I love sweet breakfasts and oatmeal, which is why I’ve been making so many baked oats recipes lately. I use to eat oatmeal pretty traditionally (with fruit and peanut butter), but I’ve grown to love baked oats over this past year.

For this recipe, you need rolled oats, banana, fresh blueberries, nut milk, more rolled oats for the crumble topping, baking powder, and pure maple syrup. This is a super simple recipe that takes about 10 minutes to prep and roughly 25 minutes to bake in the oven. You can add additional blueberries on top as well as some pure maple syrup for additional sweetness.


How Many Servings Does This Recipe Make?

This baked oats recipe is a single serving recipe. I baked my baked oats in a 6 oz ramekin. If you want to make two servings, double the ingredients and use a larger baking dish.


Ingredients

  • Rolled Oats: For the filling, you first need rolled oats. You’ll be putting all of the ingredients in a blender or NutriBullet and blending it until you form a thick and creamy consistency. Rolled oats are one of my favorite breakfast foods to have because they’re filling, rich in carbs, and keep you full for long periods of time. Baked oats is an easy way to spice up traditional oatmeal. For the maple crumble topping, you need 1 tbsp of rolled oats. You will be mixing the rolled oats and maple syrup together to form a crumble topping for the baked oats. and pure maple syrup.
  • Banana: Next, you need 1/2 of a banana. I like adding banana to my baked oats recipes because it makes them creamier and sweeter. It also bakes nicely in the oven and is an easy way to make your breakfast sweeter without adding added sugar.
  • Fresh Blueberries: You’ll also need 1/4 cup of fresh blueberries for the oat batter. You will need an additional tbsp of fresh blueberries to fold into the blueberry oat batter, as well as an additional tbsp of fresh blueberries to sprinkle on top of your baked oats before baking it in the oven.
  • Nut Milk: The next ingredient you need is a nut milk of your choice. I used unsweetened vanilla almond milk, but you could also use soy milk, silk milk, or oat milk. I buy unsweetened vanilla almond milk at Aldi because it’s super cheap, but feel free to use your favorite plant-based milk for this recipe.
  • Pure Maple Syrup: I used 1/2 tsp of pure maple syrup to sweeten the crumble topping. You can use more maple syrup if you want it sweeter. I didn’t want my baked oats super sweet which is why I only added 1/2 tsp of pure maple syrup to this crumble topping. Either way, the crumble topping is super tasty and adds the perfect crunch to this blueberry muffin baked oats breakfast. You will need an additional tsp of pure maple syrup to drizzle on the baked oats after they have baked in the oven.
  • Baking Powder: Lastly, you need 1/4 tsp of baking powder. Baking powder helps the baked oats rise.

Ingredients
  

Blueberry Baked Oats Batter

  • 1/2 cup rolled oats
  • 1/2 banana
  • 1/4 cup + 1 tbsp fresh blueberries (leave 1 tbsp of blueberries to fold in the oat batter)
  • 1/3 nut milk (I used unsweetened vanilla almond milk)
  • 1/4 tsp baking powder

Crumble Topping

  • 1 tbsp rolled oats
  • 1/2 tsp pure maple syrup

Additional Toppings

  • 1 tsp pure maple syrup
  • 1 tbsp fresh blueberries

Instructions
 

  • Preheat the oven to 350°
  • Combine the rolled oats, banana, fresh blueberries, baking powder & nut milk to a blender or NutriBullet to form a thick and creamy consistency
  • Pour the blueberry batter in an oven-safe baking dish
  • Fold in 1 tbsp of fresh blueberries
  • Mix together the rolled oats and pure maple syrup
  • Add the crumble topping to the blueberry oat batter
  • Sprinkle additional blueberries on top
  • Bake in the oven at 350° for 25 minutes
  • Add 1 tsp of maple syrup on top
