Blueberry Baked Oats Batter
- 1/2 cup rolled oats
- 1/2 banana
- 1/4 cup + 1 tbsp fresh blueberries (leave 1 tbsp of blueberries to fold in the oat batter)
- 1/3 nut milk (I used unsweetened vanilla almond milk)
- 1/4 tsp baking powder
Crumble Topping
- 1 tbsp rolled oats
- 1/2 tsp pure maple syrup
Additional Toppings
- 1 tsp pure maple syrup
- 1 tbsp fresh blueberries
Preheat the oven to 350°
Combine the rolled oats, banana, fresh blueberries, baking powder & nut milk to a blender or NutriBullet to form a thick and creamy consistency
Pour the blueberry batter in an oven-safe baking dish
Fold in 1 tbsp of fresh blueberries
Mix together the rolled oats and pure maple syrup
Add the crumble topping to the blueberry oat batter
Sprinkle additional blueberries on top
Bake in the oven at 350° for 25 minutes
Add 1 tsp of maple syrup on top
