Ingredients
  

Blueberry Baked Oats Batter

  • 1/2 cup rolled oats
  • 1/2 banana
  • 1/4 cup + 1 tbsp fresh blueberries (leave 1 tbsp of blueberries to fold in the oat batter)
  • 1/3 nut milk (I used unsweetened vanilla almond milk)
  • 1/4 tsp baking powder

Crumble Topping

  • 1 tbsp rolled oats
  • 1/2 tsp pure maple syrup

Additional Toppings

  • 1 tsp pure maple syrup
  • 1 tbsp fresh blueberries

Instructions
 

  • Preheat the oven to 350°
  • Combine the rolled oats, banana, fresh blueberries, baking powder & nut milk to a blender or NutriBullet to form a thick and creamy consistency
  • Pour the blueberry batter in an oven-safe baking dish
  • Fold in 1 tbsp of fresh blueberries
  • Mix together the rolled oats and pure maple syrup
  • Add the crumble topping to the blueberry oat batter
  • Sprinkle additional blueberries on top
  • Bake in the oven at 350° for 25 minutes
  • Add 1 tsp of maple syrup on top
