Homemade Pumpkin Pie Mug Cake Made With Banana and Oat Flour

We’re in the beginning of September and we’re full-swing in my favorite season. Fall weather, treats, and the overall atmosphere is my absolute favorite and I look forward to it every year. I am so excited to be cooking up all the yummy pumpkin recipes, because they’re some of my favorite to make!

Today I’m coming at you with this pumpkin pie mug cake made with banana and oat flour. I’ve never mixed banana and pumpkin together before, but I’m so glad that I tried this combination. You can’t taste the banana at all (which is the goal), but it serves as the perfect base for this pumpkin pie mug cake. Bananas are sweet and make the mug cake super gooey and moist, which is exactly what I wanted.


Ingredients you’ll need:

1. Rolled Oats

The first ingredient you’ll need is rolled oats. While I sometimes use whole wheat flour in my recipes, I tend to use oat flour in my recipes because it’s super affordable and a great ingredient to use for baking.


2. Banana

The next ingredient you’ll need is banana. Banana is super sweet and it’s a great way to add sweetness to a recipe without adding added sugar. I love using bananas and other fruit such as dates and applesauce to sweeten recipes because fruit contains natural sugar.


3. Pumpkin Pie Spice & Cinnamon

Next, you’ll need pumpkin pie spice and cinnamon. You can’t make pumpkin desserts without pumpkin pie spice and cinnamon–they’re must-haves when baking fall treats. Pumpkin pie spice is an ingredient I recently picked up form the grocery store because it’s an essential ingredient when making pumpkin recipes, and I knew that I wanted to start baking all of the yummy treats this fall season.


4. Canned Pumpkin

You’ll also need canned pumpkin. Canned pumpkin isn’t very sweet which is why I used both banana and pure maple syrup in this recipe, but it adds a nice pumpkin flavor to the mug cake. Canned pumpkin is also super affordable. I bought a can of pumpkin for only $0.99.


5. Nut Milk

You’ll also need a nut milk of your choice. I used unsweetened vanilla almond milk, but you can use any plant-based milk that you want. Some of my other favorite nut milks are soy milk, silk milk, and oat milk.


6. Mini Chocolate Chips (vegan)

I also added 1 tsp of mini chocolate chips to the mug cake. I really like chocolate and pumpkin together, and the mini chocolate chips give the mug cake extra sweetness. However, you can omit the chocolate chips altogether if you’re not a huge fan of pumpkin and chocolate.


7. Walnuts

Next, you’ll need 1/2 tbsp of walnuts. I love adding nuts to my desserts because it adds additional nutrients and more flavor. Walnuts are some of my favorite nuts, and they’re a great additive for desserts, breakfast recipes, and most importantly, baked oats and mug cakes.


8. Pure Maple Syrup

Lastly, you’ll need 1-2 tsp of pure maple syrup. I drizzled some maple syrup on top of my mug cake, but you can also add it into the pumpkin batter and bake it into it instead. I love using a little maple syrup as a sweetener because it’s super sweet and it’s natural sugar.

Pumpkin Pie Mug Cake Made With Banana

Ingredients
  

  • 1/3 cup rolled oats
  • 1/2 banana
  • 1/4 tsp pumpkin pie spice
  • 1/4 tsp cinnamon
  • 3 tbsp canned pumpkin
  • 1/2 cup nut milk (I used unsweetened vanilla almond milk)
  • 1 tsp mini chocolate chips (vegan)
  • 1/2 tbsp walnuts
  • 1-2 tsp pure maple syrup

Instructions
 

  • Add rolled oats, banana, pumpkin pie spice, cinnamon, canned pumpkin and nut milk to a blender or NutriBullet and blend until there is a thick and creamy consistency
  • Pour pumpkin batter in a microwe-safe bowl
  • Heat in the microwave for 75 seconds
  • Add mini chocolate chips and walnuts on top
  • Add maple syrup and nut butter and enjoy!

This pumpkin pie mug cake is made with canned pumpkin, banana, oats, nut milk, walnuts, and more! All of these ingredients are healthy, vegan, and taste incredibly well together. This is the perfect fall treat to have that you can easily make in less than five minutes. I topped my mug cake with walnuts, pumpkin pie spice, and pure maple syrup, and it was the perfect pumpkin treat!
