Hello everyone and welcome back to my blog! I hope you are all having a fabulous week. What better way to kick off the week than a recipe for blueberry banana baked oats. I’ve been really into making baked oats recipes lately because it’s a super quick and easy breakfast.

Blueberry Banana Baked Oats

This recipe is for fluffy blueberry banana baked oats, which is perfect for anyone who prefers fruity breakfasts. Blueberries and banana are some of my favorite fruits, and they go well together in baked oats. Fruit is rich in antioxidants and I try to add fruit to my diet every single day.

This recipe is also inexpensive and all of the ingredients are budget-friendly. The ingredients you need for this recipe are rolled oats, banana, fresh blueberries, a nut milk of your choice (I used unsweetened vanilla almond milk), pure maple syrup, and baking powder. The maple syrup is needed for the topping. These are all simple and affordable ingredients you likely have lying around in your pantry.

How long does this recipe take to make?

This recipe takes 35 minutes to make. It takes around 10 minutes to prep the ingredients, 20 minutes for the blueberry baked oats to bake in the oven, and 5 minutes for the baked oats to cool.

How many servings does this recipe make?

This is a single serving breakfast recipe. I used a ramekin to bake my baked oats in the oven. The ramekin I used holds 6 oz.


Ingredients

  • Rolled Oats: The first ingredient you need to make this blueberry banana baked oats recipe is rolled oats. Rolled oats are super inexpensive and make a great base for this recipe. Rolled oats are also rich in carbs, which keep you full for long periods of time and give you energy. It’s one of my go-to ingredients because it’s super affordable and tastes great! You can buy a large container of rolled oats at the grocery store for just a few dollars and it will last you weeks, if not months.
  • Banana: You also need 1/4 of a banana. Using fruit in recipes is a great way to sweeten dessert recipes/breakfast recipes because fruit is naturally sweet and has no added sugar. I often use banana, dates, and applesauce in my recipes to add a bit of sweetness, and they always work great. Banana also helps make the baked oats moist and fluffy.
  • Fresh Blueberries: You also need fresh blueberries. I added two tbsp of fresh blueberries and mixed them into the oat batter. Blueberries are not only super delicious, but they add additional sweetness to this baked oats recipe. Blueberries are also one of my favorite fruits, and this recipe is especially perfect for anyone who loves the combo of blueberries and bananas! You will need an additional 1 tbsp of fresh blueberries for the topping.
  • Nut Milk: You need a nut milk of your choice. I used unsweetened vanilla almond milk, but you could also use soy milk, oat milk, or cashew milk. Nut milk makes the baked oats more moist and fluffy, and adds creaminess to the oats.
  • Pure Maple Syrup: For the topping, you need 1 tsp of pure maple syrup. I drizzled the maple syrup on top of the baked oats after they had cooled.
  • Baking Powder: Lastly, you need 1/4 tsp of baking powder. Baking powder helps the oats rise.

Ingredients
  

  • 1/2 cup rolled oats
  • 1/4 banana
  • 2 tbsp fresh blueberries
  • 1/2 cup nut milk (I used unsweetened vanilla almond milk)
  • 1/4 tsp baking powder

Toppings

  • 1 tsp pure maple syrup
  • 1 tbsp fresh blueberries

Instructions
 

  • Preheat oven to 350°
  • Add rolled oats, banana, nut milk and baking powder to a NutriBullet or blender and blend until there is a thick and creamy consistency
  • Pour the blueberry oat batter in an oven safe baking dish
  • Mix in the fresh blueberries
  • Add 1 tbsp of fresh blueberries on top
  • Bake in the oven for 20 minutes at 350°
  • Add maple syrup and enjoy!
