Vegan Vanilla Cake Batter Protein Baked Oats

Hello everyone and welcome back to my blog! I hope you are all having a wonderful week.
I’ve been really into making breakfast recipes lately, and I have a cake batter/birthday cake bake oats recipe to share today.

If you’ve been keeping up with my blog, then you know that I’ve been making a lot of baked oats recipes lately. They’re so easy to make and there are so many flavors that you can make.

Today’s post is dedicated to cake batter baked protein oats. If you love cake batter flavored treats, then you will absolutely love this cake batter baked oats recipe. It’s a single serving recipe that’s low in sugar and made with simple ingredients: rolled oats, banana, vanilla protein powder, nut milk, baking powder, and sprinkles.

This is the perfect recipe to make if you’re craving something sweet for breakfast. I personally prefer sweet breakfasts over savory ones, so I typically make some sort of sweet breakfast for myself. Protein oats are great to make because it’s a very filling meal that’s packed full of nutrients.

How Long Does This Recipe Take To Make?

This recipe takes about 35 minutes to make including prep time. Allow 10 minutes to prep the ingredients, 20 minutes for it to bake in the oven, and about 5 minutes for it to cool.


Ingredients

  • Rolled Oats: The first ingredient you need to make this cake batter baked oats recipe is rolled oats. Rolled oats or instant oats will work for this recipe, so either one is fine. I usually use rolled oats for my recipes and use instant oats if I’m having oatmeal with fruit and peanut butter for breakfast. Rolled oats are also really affordable which is why it’s one of my go-to ingredients to use for my recipes. You can buy a large container of rolled oats from the grocery store for just a few dollars, and it usually lasts a while.
  • Banana: You also need a ripe banana. Banana makes the baked oats thick and fluffy. I use banana in a lot of my breakfast and dessert recipes to make them more moist and so they have a better consistency. Bananas are also high in potassium and they’re a great natural sweetener to use when baking. In addition to bananas, I often use fruits such as applesauce and dates in my baked goods and dessert recipes to sweeten them. Fruit is great to use as a sweetener and as an alternative to sugar.
  • Simple Orgain Plant Based Vanilla Protein Powder: Next, you need vanilla protein powder. I used Simple Orgain Plant Based Vanilla Protein Powder, but you can use any protein powder you want. Just note that it might taste slightly different if you use a different vanilla protein powder. This protein powder you can buy pretty much anywhere, and it’s usually pretty inexpensive. It’s a great plant-based protein powder made with simple and natural ingredients, and it also tastes really good.
  • Baking Powder: The next ingredient you need is baking powder. You need 1/4 tsp of baking powder for this recipe, and it’s a necessary ingredient because it helps the baked oats rise.
  • Nut Milk: You also need a nut milk of your choice. I used unsweetened vanilla almond milk, but you can use any plant-based milk that you want. Using a nut milk makes the baked oats super creamy, which is why I prefer to use a nut milk instead of water. With that being said, you can also use water.
  • Rainbow Sprinkles: The last ingredient you need is 1 tsp of rainbow sprinkles. You can use any rainbow sprinkles you want, and this adds some sweetness as well. I topped my baked protein oats with sprinkles and they melted in the oven and made the baked oats even sweeter.

Ingredients
  

  • 1/3 cup rolled oats
  • 1/4 medium banana
  • 2 tbsp vanilla protein powder (Simple Plant Protein Powder)
  • 1/2 cup nut milk
  • 1/4 tsp baking powder
  • 1 tsp rainbow sprinkles

Instructions
 

  • Preheat the oven to 350°
  • Add the rolled oats, banana, vanilla protein powder, baking powder & nut milk ngredients to a NutriBullet or blender to form a thick and creamy consistency
  • Pour the cake batter into an oven safe baking dish
  • Mix in the rainbow sprinkles
  • Bake in the oven for 20 minutes at 350°
  • Add your toppings and enjoy!
