Hello everyone and welcome back to my blog! I’m super excited to share this vegan tofu breakfast sandwich recipe. Since I’ve been making a lot of sweet recipes and breakfast recipes lately, I wanted to switch things up a bit and share this yummy breakfast sandwich.
I use to make breakfast sandwiches and eat eggs all the time prior to adopting a vegan diet, but as a vegan, I no longer eat eggs. However, this breakfast sandwich is a great alternative! As a replacement for eggs, I used tofu that I cooked in the pan with some olive oil, and it was seriously the perfect breakfast. It’s also really filling and can easily be made in 10-15 minutes.
For this recipe, I used a whole wheat English muffin that I got from Trader Joe’s, tofu, nutritional yeast, olive oil, everything but the bagel seasoning (which you can buy from Trader Joe’s), avocado, spinach, hummus, and salt and pepper. You could also add tomatoes or another topping of your choice, but this vegan breakfast sandwich is definitely worth making.
Ingredients you’ll need:
1. Whole Wheat English Muffin
The first ingredient you’ll need to make this yummy vegan breakfast sandwich is an English muffin. I used a whole wheat English muffin that I bought from Trader Joe’s, but you can use any English muffin that you want! The ones I bought from Trader Joe’s came in a pack of six for only $1.49, so if you’re in need of English muffins and have a Trader Joe’s near you, I highly recommend checking it out.
2. Tofu
The next ingredient you’ll need is tofu. I used extra firm tofu, but you can use any tofu for this recipe. I really like adding tofu to my meals because tofu is high in protein.
3. Nutritional Yeast
You’ll also need 1/2 tsp of nutritional yeast. Nutritional yeast is another one of my favorite ingredients to add to my meals as a vegan because it’s a great source of vitamin B12. It’s also super tasty, and a great alternative to cheese. You can get nutritional yeast at pretty much every grocery store, but I typically buy mine from Trader Joe’s.
4. Olive Oil
Next, you’ll need 1/2 tsp of olive oil. I added olive oil to my pan to make my tofu extra crispy. A little bit of olive oil is all you need to make your tofu golden brown.
5. Everything But The Bagel Seasoning
This next ingredient is a must. Everything but the bagel seasoning is one of my all-time favorite seasonings I have ever used. It’s sold at Trader Joe’s, and it seriously tastes like an everything bagel. It’s a great ingredient to add to avocado toast and breakfast sandwiches, and it adds the perfect flavor to this recipe.
6. Avocado
I also added avocado. You can add as much or as little avocado as you want, but I really like avocado so I always add quite a bit to the meals that I make. Avocado is a great source of fat and it’s also just super tasty. It adds additional nutrients to this breakfast sandwich and is a food that I eat daily.
7. Spinach
I love adding spinach to my meals to get some extra greens in. Spinach is a great ingredient to add to both smoothies and sandwiches, and you can’t even taste it.
8. Hummus
I also added a layer of hummus to my sandwich. I used an organic hummus that I bought from Trader Joe’s, but you can use any hummus that you want. Hummus adds a nice creamy touch to the sandwich and adds additional flavor.
9. Salt & Pepper
Lastly, you can add a dash of salt and pepper.

Vegan Tofu Breakfast Sandwich
Ingredients
- 1 whole wheat english muffin
- 2 slices tofu (about 1/4 cup)
- 1/4 tsp nutritional yeast
- 1/2 tsp olive oil
- everything but the bagel seasoning
- 1/4 avocado
- spinach (handful)
- 1/2 tbsp hummus
- dash salt and pepper
Instructions
- Cook the tofu and olive oil in a pan on low-medium heat for 10-15 minutes
- Toast the English muffin in a toaster
- Add all of the ingrdients to the sandwich: tofu, hummus, avocado, nutritional yeast, spinach, salt & pepper
- Enjoy!
Notes
Final Thoughts
This is the perfect healthy breakfast to make in the mornings. It’s vegan, healthy, and super filling. And, it’s the perfect quick recipe to make, especially if you love breakfast sandwiches.
