- 1 whole wheat english muffin
- 2 slices tofu (about 1/4 cup)
- 1/4 tsp nutritional yeast
- 1/2 tsp olive oil
- everything but the bagel seasoning
- 1/4 avocado
- spinach (handful)
- 1/2 tbsp hummus
- dash salt and pepper
Cook the tofu and olive oil in a pan on low-medium heat for 10-15 minutes
Toast the English muffin in a toaster
Add all of the ingrdients to the sandwich: tofu, hummus, avocado, nutritional yeast, spinach, salt & pepper
