The best vegan tofu breakfast sandwich.

Ingredients
  

  • 1 whole wheat english muffin
  • 2 slices tofu (about 1/4 cup)
  • 1/4 tsp nutritional yeast
  • 1/2 tsp olive oil
  • everything but the bagel seasoning
  • 1/4 avocado
  • spinach (handful)
  • 1/2 tbsp hummus
  • dash salt and pepper

Instructions
 

  • Cook the tofu and olive oil in a pan on low-medium heat for 10-15 minutes
  • Toast the English muffin in a toaster
  • Add all of the ingrdients to the sandwich: tofu, hummus, avocado, nutritional yeast, spinach, salt & pepper
  • Enjoy!
